In my ideal world, I would wake up, have a 45ish minute sweat session, come home, shower and dig into a leisurely breakfast. I’d rotate between an ornately decorated smoothie bowl one day, the next a platter of eggs, sautéed greens and avocado, maybe add a fruit and yogurt bowl into the mix.

But alas, I swapped my slower mornings for a get-out-the-door-and-into-the-gym-as-fast-as-you-can-before-work kind of schedule. Don’t get me wrong, running in the morning puts me in a great mood the rest of the day, that’s here to stay. However, on-the-go breakfasts are a necessity for this to work. Bye, bye leisurely breakfast. My go-to to-go (see what I did there?) breakfast of late has been overnight oats.

Unless you’re new to the healthy blogging scene (in which case, hello, welcome, glad you’re here!) you’ve probably heard of overnight oats. They’re one of those pinterest-perfect healthy blogger staples that if you’re not already making, you’ve at least seen before. I’ll be honest, I wrote them off for a long time. Cold oats? Mmkay… whatevs. I was also afraid that an oat breakfast wouldn’t fill me up for the morning (I was wrong). But two things changed my mind. Number one: I needed to find an easy, portable, customizable breakfast staple for after my AM workouts. Number two: my girl, Rachel created a blog called Oats for You and her beautiful oat instagrams were just too much to handle I needed these oats in my life.

So I got to tinkering. Playing with chia seed to non-dairy milk to oat ratios, testing out different types of oats (my favorite by far has been Steel Cut Oats). Testing out different types of toppings and flavors. Typically I’ll make a week’s worth of plain overnight oats on Sunday night and each morning I’ll add whatever toppings I’m in the mood for. Having that variety has helped me stay out of a breakfast rut. Needless to say I’ve been a happy hungry guinea pig.

One of my favorite creations has been a classic flavor combo that’s spanned the ages: the PB & J. The combination of chunky, natural peanut butter and fresh chia jam is unstoppable. Ever since I discovered chia jam last summer I barely ever get store-bought anymore. Plus, like these oats, the jam is totally customizable, too. You can use whatever fruit you’re craving or have in your fridge to make it.

Peanut Butter and Chia Jam Overnight Oats
Recipe Type: Breakfast

Overnight Oats are the perfect breakfast to make ahead and eat on the run. These Peanut Butter and Chia Jam Overnight Oats are packed with the superfood, chia, but taste like your favorite old school PB & J.
Ingredients
  • For Oats:
  • 1 Cup of Almond Milk or Non-Dairy Milk
  • 1 tbsp of Chia Seeds
  • 1/3 Cup of Steel Cut Oats
  • 1 tsp of Cinnamon
  • 1/2 tsp of Vanilla Extract
  • Optional: 1 tbsp of Maple Syrup or Honey
  • Topping:
  • 1 tbsp of Chunky Peanut Butter
  • 2 tbsp of Chia Jam
  • For Chia Jam:
  • 1 Cup of Fresh Berries
  • 1 Tbsp of Chia Seeds
  • 2 Tbsp of Water
  • 1 tsp of Maple Syrup or Honey
  • Optional: Squeeze of lemon
Instructions
  1. For Oats: Place dry ingredients (chia, oats, cinnamon) into a jar and stir until combined.
  2. Stir in almond milk and vanilla extract.
  3. Store in fridge overnight
  4. For Chia Jam: Puree fruit, water, chia seeds, squeeze of lemon and sweetener together and let set in an in an airtight container in the fridge overnight
  5. To assemble: Stir a dollop of jam and peanut butter into oats and garnish with extra fresh fruit

    I dismissed overnight oats for SO long because I thought “who would like cold oats?” I was wrong. I like them…a lot. This almost exactly what I’ve been making lately, minus the jam (but that’s a great idea).

    Overnight oats are one of my favorite breakfasts, especially on busy mornings! I always wondered if steel cut oats would work since old fashioned traditional are always my go-to. I’ll have to try this recipe out!

      I’ve always been more of steel cut gal cuz I like the texture but I go with the 1/3 cup to 1 cup of liquid ratio

    I absolutely love chia jam, and this sounds awesome! I’ve only seen chia jam recipes that you have to cook first, so I’m all for this – SO much easier. I can’t wait to try with all of the fresh berries coming this summer 🙂 Sadly I have to avoid grains for awhile to heal some GI issues, but once I’m back on the oats wagon, this is top of the list!!

    I haven’t made Overnight Oats in a long time, but I absolutely LOVE the texture! I may add a scoop of Healthy Skoop for some extra protein. 🙂 I love to top mine with bananas or blueberries and obviously a spoonful of nut butter. Thanks for sharing!

    I have a hard time eating steel cut oats as overnight oats, but I think I would appreciate them more than normal ! I still have a hard time getting over the cold and slimy part of regular oats as overnight oats… so perhaps I should try again 🙂

      Maybe to make them less slimy add fewer chia seeds? I know sometimes they can be a bit much texture wise.

    Guuuuuurl! That is freakin’ mouth watering. I’ve been seeing everyone adding maple syrup to their overnight oats as a sweetener lately. Such a good idea! There are definitely times when I feel my oats can be a bit sweeter 🙂 That or mashed banana usually does the trick!

      Haha I’ve definitely meant to make them so many times and forgotten, that’s why I make a big old batch in the beginning of the week so I don’t forget.

    Overnight oats was definitely not something I tried until I started blogging/reading blogs and I’m so glad I did! Although I also love a good leisurely morning, most of the times it’s just not possible but having a jar of oats waiting for me in the fridge makes it a little better. 🙂 I love adding some spices, coconut and a shredded carrot for a carrot cake (of sorts) overnight oats.

    On the go breakfasts when you workout in the morning are serious business. I loveeee overnight oats especially this time of year! Plus I love all things chia, and PB&J is just classic, so these will be made asap.

    I’m also a big smoothie lover (aren’t we all). I would love to be a least rely breakfast eater, but usually it’s either a smoothie in the car on my way to work, or a prepped breakfast at my desk.

    i love overnight oats! but i’m usually lazy to make them the night before… can you really store them in the fridge for a week?? this might be revolutionary for me haha

      I’ve been storing mine in the fridge for a week so I hope it’s ok 😉 Also, you can mix together the dry ingredients in mason jars and just remember to add a cup of liquid the night before and stir if you’re more comfortable doing it that way.
