Beat the summer heat with these refreshing and flavorful raspberry lemonade popsicles.

I bought my popsicle mold on a whim last summer because I thought it could be fun for recipes. Little did I know it would become a lifesaver. My old apartment had one dinky AC unit in the kitchen and the rest of the apartment was sweltering. All summer I made pops out of different flavors of Bai and I had one almost every night to cool me down before I went to bed.

I’m the kinda gal who likes to sleep under a big fluffy down comforter in a cool room so my summer situation is less than ideal. My apartment here doesn’t have AC either so I’m bustin’ out the popsicle mold. I’m trying my best not to complain about the heat because only a couple months ago I was literally buried in 7 feet of snow. I just gotta get my butt to a beach so I can soak up this sun properly, not bake in my car… which also doesn’t have AC.

Anyway, back to the fun stuff. Popsicles! I absolutely love these pops because they combine 2 of my favorite summer flavors (besides watermelon obvi) Lemon & Raspberry. Both are sweet-tart, but when they go into popsicle form the ice balances it out perfectly. I did some recipe testing with my sister after we did a run together and damn did these hit the spot. Oh and the best part (besides being delicious) they’re so easy to make! Only 2 ingredients and less than 5 minutes of prep.

Beat the summer heat with these refreshing and flavorful raspberry lemonade popsicles.
Ingredients
  • 1 Cup of Raspberries (fresh or frozen)
  • 2 Cups of Lemonade (I used Bai5 Limu Lemon)
Instructions
  1. Blend raspberries and lemonade in a blender
  2. Pour mixture into a popsicle mold
  3. Allow to freeze overnight

    Making homemade popsicles has been on my to-do list since last summer and I still have yet to get around to actually buying a popsicle mold! The AC at my apartment is one small unit that only cools off the kitchen, so a popsicle before bed would be much needed this summer!

    I tried Bai 5 for the first time last week and I LOVED it. I got the pomegranate flavor. Does the lemon one taste like lemonade?! If so, I’m definitely buying it next!

      If you liked the Pom you’d probably like the lemon – it’s a bit more sour than typical lemonade but I love it. It’s also a great mixer
