Avocado Quinoa Harvest Bowl
I Love Fall
Imma bout to get ruul basic up in here but, what the heck, I am SO pumped it’s fall. This summer actually turned out to be quite enjoyable, but nothing can compare to the perfection that is cool (but not cold) weather, cozy sweaters, pumpkin spices, apple picking, squash cooking, and leaf jumping.
I’d argue September is especially wonderful because we get to have it all. The weather slowly transitions, so sometimes you get a little summer and sometimes you get a little fall. Oh and the running? 1000% more enjoyable. No longer do you have to wake up at the ass crack of dawn just so you don’t melt into a sweaty stinky puddle. Running through back roads lined with golden leaves? Pure bliss my friends. Oh and forget about getting to the office covered in sweat (not that that’s ever happened to me….)
When did loving fall become basic?
My only beef is that now we’re attacked for loving fall. For the record, fall has always been flawless, but all of a sudden we’re labeled “basic” if we enjoy something that is objectively the best season? Ok cool. So what if I want a pumpkin spice wonderland? So what if apple picking in an oversized sweater and boots is my idea of perfection? Bye haters I have some flannel shirts, slouchy beanies and oversized scarves to rock.
Oh and speaking of fall, I have the ultimate autumn recipe to shut down the haters, because it is hearty, damn delicious, and hella satisfying. They’ll be drooling as you drizzle tahini over this bed of spicy arugula, roasted brussels sprouts, pepitas, avocado slices and warm fluffy quinoa.
You’ll Want to Make Enough for Leftovers
This recipe technically serves 1 but I highly recommend making plenty because it makes excellent leftovers…aka a lunch you won’t get sick of. You can smile as you dive into your bowl of happiness because you’ll be wrapped up in the warmth of your oversized sweater that somehow knows how to hug your soul.

Green Goodness Salad
this is legit my favorite salad of all time!
This is definitely the time of year that I wished I lived up north. It is still 80+ degrees down here in FL, but I am dying for fall weather. This bowl looks delissshhhhh and I am t0o0otally making it this week. Gorgeous!
When winter rolls around I’ll be extremely jealous of your weather.
Even though we don’t have fall weather, September is one of my favorites months. September and May I think top my list. I am all for fall foods though. I think this meal is a perfect bridge from summer to fall 🙂
Fall foods are my favorite! Bring. on. the. squash.
Hahha I am so basic. I ordered a PSL yesterday (it actually wasn’t that good…. sadly) and was like wait, does this make me THE MOST BASIC? This bowl isn’t basic though! Love everything in it so very much.
Hahah my sister texted me that she did the exact same thing. I love the idea of a PSL but they always add way too much and you can’t even taste the coffee, but you have to have at least one because… #fall
mmmm, all the green!
The yummiest color
Perfection! I will be right over, just make sure to make LOTS of extras…I’d say that this weather we are having on Nantucket is PURE BLISS and I hope that you are enjoying it! XOXO
I’ve been LOVING it! Such a nice break from the shweaty sticky heat of Boston
Everything I love in one bowl! YES!! And that it pairs perfectly with fall… I’m all in!
Right? That’s my typical approach for most meals – throw all the things I like in a bowl – lol
I bought so many brussels yesterday! Making this bad boy for dinner soon! yum 🙂
Mmmm roasted brussels can’t be beat
Okay girl your pics are INSANE. Pinned!! 🙂 I love fall too!
Aww thank you so much Leigha!
Just divine. I love bowl foods & this avocado quinoa harvest bowl is ideal for the new Spring season here in Australia. Thanks Georgie!
I always forget that Aussie seasons are reversed, but you’re totally right it works for fall and spring! thanks for stopping by Thalia
Just saw this and wanted to say that it looks like an incredible healthy bowl (because food in bowls is always more fun, right?!). Brussel sprouts are so underused but they can be so good sautéed, and I love the tahini dressing – I can imagine that it gives it all lots of flavour! Perfect for leftovers too, as you say <3
Thanks Claudia! Tahini dressing is one of my favorites, it really brings all the flavors together
I wish it was still summer – rain, rain, go away! – but bring on ALL the pumpkin. We don’t get squash outside of Fall/Winter over here – no canned pumpkin, either – so I’m eating it by the pound [not kidding … occasionally]. So I’m neither a Fall/Autumn [sorry, I grew up with that term <3] hater nor despise it. Just keep up summer temperatures and I'd be happier already.
No matter which season: your bowl looks comforting – yes to all the green!
I certainly don’t hate the late summer weather (slightly cooler temps) and YES to alllll of the squash. It’s never as good out of season
Yum! I think simple is the way to go and I have been loving grain bowls lately! You can add anything to them and they are always delicious. I am so excited for fall, but in Florida, you never know what the weather is going to be like!
Right? They’re the perfect base
I just wish so bad this was on my desk right now. Brussel sprouts and tahini go so well together, and I am obsessed with arugula lately. Would it be ok with you if I put a link and image of this in a fall inspiration post I’m putting together?
Of course! Link away! Arugula is my FAV
I made this last night and it turned out so yummy!! I had leftovers today for lunch. It’s going to be one of my go to recipes. I am glad I found your site.
Awesome! Thanks for sharing Kerry. It’s one of my favorite meals. So simple and so satisfying
What a great bowl! Made this for the family and it was a super hit – the Tahini dressing is my absolute favorite. Will be making that a staple in this vegan household. Thank you so much.
You have no idea how happy that makes me Celina! Tahini is just SO good. My favorite for dressings.
I’m going to try this
