These 9 Quick and Easy Vegetarian Dinners for Busy Weeknights will take the stress off your plate for finding a meal that’s both easy to make and healthy to eat.
Raise your hand if you have a rotation of maybe… 5 meals that you make every single week. Yup, that’s me, guilty as charged. While I love my weekly pizza making date with bae, most nights, I’m scrambling to figure out what I want to eat at 7 o’clock. By that time, I’m getting hungrier and lazier by the second.
The dinner rut is real. Having go-to meals is clutch, but when you eat the same thing over and over again things get monotonous and it starts feeling like groundhog day real quick. Now I’m not trying to tell you that you need a new fancy gourmet meal every night to feel alive again. Instead I’m saying, finding more easy go-to meals can help buff your weeknight dinner arsenal from 5 meals to 15.
So I pursued some the good ‘ol Long Run archives as well as some of my favorite blogs to share 9 Quick and Easy Vegetarian Dinners that will spice up your weeknight routine.
Each of these recipes:
- is packed with veggies
- is simple to make
- takes less than 40 minutes from start to finish (and a majority of them take less than 30 minutes.)
1.) Avocado Quinoa Harvest Bowl from In it 4 the Long Run
This hearty, satisfying mix of brussels sprouts, quinoa, avocado and tahini sauce has become the most popular recipe on my blog for good reason. I’d recommend doubling the recipe because it makes excellent leftovers.
2.) Butternut Squash and Kale Salad from Ambitious Kitchen
Nothing screams fall like a butternut squash and kale salad. This hearty salad is perfect for a light dinner that will still leave you satisfied.
3.) Zoodles with Basil Avocado Sauce from In it 4 the Long Run
Zoodles are one of my favorite weeknight dinners because they’re so easy to prepare ahead of time. Make one big batch of zoodles on Sunday and you’ll have quick, healthy dinners all week. This creamy basil avocado sauce is the perfect compliment to a bowl o’ zoodles.

Arugula? Pasta? Burrata? Um, hello – say no more. This dinner looks to die for and looks crazy easy to prepare. Only 2 pots? Yeah sign me up.
5.) Caprese Zoodles from In it 4 the Long Run
Tomato, basil and mozzarella. This combo literally will never get old. And now that you have that big ‘ol batch of prepped zoodles this dinner becomes even easier. You can enjoy this recipe raw or cook the zoodles.
6.) Kale Pesto Pizza from The Almond Eater
This pizza looks absolutely heavenly. Homemade pizza is such a weeknight dinner winner in my book. It’s easy to prepare and always squashes cravings for the greasier, fast food alternative.
7.) Green Goodness Salad from In it 4 the Long Run
I seriously swear by the magic of this salad. Whenever I’m feeling a little out of balance and need a good green boost I love eating this a big serving of this Green Goodness Salad. If you’re feeling extra hungry I like to add Gardein or Beyond Meat faux chicken strips.
8.) Southwest Quinoa Power Bowl with Honey Lime Dressing from Fit Mitten Kitchen
Power bowl is right! With black beans, quinoa, red peppers, avocado and sweet potato this bowl is a total power player. It’s the perfect mix of veggies, healthy fats and plant-based protein. Plus it’s got all the southwest flavors to keep your tastebuds happy too.
9.) Breakfast Burrito Bowl from In it 4 the Long Run
Breakfast for dinner might be the best thing since breakfast itself. This breakfast burrito bowl is pretty much the three best words (Breakfast + Burrito + Bowl) in the universe combined to make one amazing meal. It hits the spot every time.
