Roasted Rosemary Sweet Potatoes

Make sure to get your serving of roasted rosemary sweet potatoes early, because there won't be any leftovers once your guests take a bite of these sweet, perfectly seasoned and lightly crisped spuds.
  • 4 medium sweet potatoes chopped in 1 inch pieces
  • 1 medium onion diced
  • 1½ tbsp of olive oil
  • 2 tbsp of fresh chopped rosemary
  • ⅓ cup of pepitas (shelled pumpkin seeds)
  • Salt & Pepper to taste
  1. Preheat oven to 400ยบ F
  2. Wash and chop sweet potatoes
  3. Dice medium onion
  4. Chop rosemary
  5. Throw sweet potatoes, onions and rosemary into a large bowl and toss with olive oil, pepitas, salt & pepper
  6. Lightly coat baking tray with olive oil - place sweet potato mixture on the tray
  7. Roast for 45 minutes - flip potatoes once after 20 minutes
