How to Make a Super Veggie Loaded Sweet Potato Bowl

Sweet Potato Veggie Bowl

I love veggies (naturally after being a vegetarian for 9 years). One of my favorite meals to make and eat is taking a sweet potato and loading it up with more vegetables. To finish it off I like to add some herbs, spices and for some crunch I’ll add nuts or seeds.

Last week’s creation had:

  • 1 baked sweet potato (potato setting on microwave)
  • Sauteed onions with fresh rosemary
  • 1/5 can of chickpeas
  • 1/5 can of black beans
  • 1/4 ripe avocado
  • 2 small vine ripe tomatoes
  • Handful of Trader Joe’s Omega Mix (pumpkin seeds, sunflower seeds, pecans, craisins, walnuts)

But have fun! Improvise and of course takes some pics and share.
