What I Ate Wednesday
This week has been a toughy so far. It’s crazy hot in NYC, but I managed to squeek in a nice run this morning in some brand new highlighter yellow shorts and a new matching sports bra. I felt pretty baller.

Breakfast – Overnight Oats

Lunch – Kale & Mixed Green Salad with Chickpeas, Tomatoes, Almond Slivers, Edamame, Sprouts, Coconut and Sesame Dressing

Dinner – Sweet Potato with Sauteed Kale, Avocado, Edamame, Pepitas (Pumpkin Seeds) and Red Bell Pepper

Seaweed! This was so good. I was in the mood for some flavor, but didn’t want to feel particularly full and this was the perfect salty spicy snack. Also made me feel at home.

    That is a very healthy day of eating. I need to be inspired by how well others eat. Last night after my hockey game I had 10 wings, potato wedges (w/ cheese) and two 22 oz beers. FAIL, felt like crap this morning. Gotta fix the eating.

    Thanks- it certainly helps that I really enjoy veggies but I definitely indulge too! Favorite treats are anything resembling a s’more.
    Also since I eat a lot by myself and don’t have to cater to anyone else’s preferences a lot of temptation is avoided.
