WIAW: Back to the Grind

Happy Wednesday!


Over the long weekend I had some time do some food prep to help make packing lunches and snacks for the days I’m at campus all day. It saves money and frankly most of the food is meh. So I’d rather pack my own.

Scenes from Monday Food Prep:

Chickpea, black bean, tomato & cucumber Salad (which you can jazz up later)

So my fun bit of prepping really helped for a crazy day on campus:

Breakfast:

Left over pancakes with yogurt and peaches. Mmmm.

Pumpkin RecipesSnack:

Kashi coconut & chocolate bar (from my foodie pen pal) and iced coffee

Mixed greens with pecans, avocado and sprouts with a sesame dressing.

Dinner:

Recognize that salad? Plus I added some pesto and slivered almonds.WIAW

Dessert:

Banana-Pumpkin “soft-serve” with a little maple peanut butter and coco peanut butter mixed inWIAWNot pictured: I had 2 other apples through out the day but I ate them so fast I forgot to take a picture.

Nothing too sexy for WIAW but it certainly helped fuel me from the time I got on campus 8am to the time I left 10:30 pm. Luckily Tuesdays are my only super-busy day like that.

    I just came across your blog today, and wow.. I’ve been missing out. I love it! All of your meals – especially dinner, sound and look incredible. What all did you add to your dinner salad?

    p.s. if you light a candle when cutting onions, your eyes won’t tear

      Thanks so much! Your blog looks great too. In the chickpea salad there were also black beans, cucumbers, tomatoes and I added almonds and pesto. Great advice because I have the hardest time cutting onions.

    Definitely stealing that light a candle advice. Food prep is so important for me to eat well, especially in college. Yummy salad!

      I once tried holding a piece of bread in my mouth (as suggested to me by my sister) it didn’t work so well. Hopefully the candle will prove more successful.

    When I was in college, I would make a huge kale salad on the weekends, and it lasted me a few meals. It keeps really well, and the kale softens over time. For lunch, I would usually bring a salad and a yogurt parfait with frozen fruit (to keep it cold) and granola.

      Oo those all sound awesome. I’m a bit of a kale-a-holic, because it does keep for so long. Great idea about the fruit keeping the yogurt cold!

    Hahahah Georgie – I have the same problem when cutting onions too!! & I’m having chickpeas in my salad today! Forgot about those yummy little guys 😛 Uhh, banana pumpkin anything sounds delicious. I’m certainly preparing myself for the pumpkin-anything obsession that I feel coming on! Hope your school year is going well so far! WOO, senior year!! Go girl!!

      Chickpeas are so great- plus now I have a food processor I can’t wait to try new recipes with them. I don’t know what it is in pumpkin that makes me so obsessed, but I’m not fightin’ it!

    OH yum all of your eats look super delicious 🙂
    I hate cutting onions too…my eyes turn bright red and puffy ahah

    I actually don’t food prep and the only “set” meal I have of the day is breakfast, but I’m trying to figure out a routine that will sustain me.
    Lunch especially is hard…I never know what to eat lol. I usually just end up snacking on whatever I have laying around at our house!

      It’s so tough trying to fit food/cooking into a routine, especially if you do enjoy it but just don’t have the time some days. I try to prep food to make things quicker but a lot of times what I’m craving that day ends up determining what I eventually eat.
