This weekend my love of pinterest and potlucks collided deliciously into the first (of many) Pinterest Potlucks. It was such a success I thought it would be the perfect thing to share for my What I Ate Wednesday Post this week.
The Rules:
- Make and bring one recipe you’ve been wanting to try
- Bring supplies for a craft you’ve been wanting to make
The Result
These ladies rose to the occasion and brought the perfect variety of savory and sweet. The pilot potluck was myself and 3 of my friends (all IMC majors who went to London, no wonder I love them!)

I also thought I’d share some of the food I’ve been loving lately. I’m obsessed with all the veggies I get from my CSA and I did a massive round of food prep with Nellie and it’s been the biggest life saver to be able to pick from what I’ve got on hand with little to no effort.
Some Things I’ve Been Eating Lately:
Gimme! coffee. So good. Pricey, but worth it.
Overnight Oats w/ Pumpkin Puree, Cinnamon & Pepitas
Thank God for food prep!
Lunch & Dinner packed in my bag: 2 different veggie loaded salads, an energy bite and an apple
When I do have time to sit down and eat:
Left over Sweet Potato Burger, roasted CSA Veg and crispy Kale

- What’s your favorite meal to bring to a potluck?
I love bringing dessert to potlucks. I rarely make cakes (because I really don’t need a 3 layer cake sitting around, calling my name), so I like to bake one to share with friends.
That’s a really good point. It’s always nice to bring something you love, but don’t have the best self control with. Aka most dessert for me.

Sadly, potlucks aren’t really known over here. But whenever we have a girls’ night or other get-together I’m assigned dessert duty and I won’t complain. Brownies and cookies are my quick go-tos but when I have some more time I like trying vegan versions of candy bars like Mars.
How did you do the mason jars? I have some sitting around and making good [and possibly sparkling!] use of them seems like a great idea.

For the mason jars:
Mix glitter into regular elmers glue (which will dry clear) and pour mixture into the jar and swirl around until the inside is completely coated. It will look opaque but dry clear.

The mason jars are incredibly cute, but I’m not sure I could convince my dad to let me glitter-fy them. Lol.
I saw Angela from Oh She Glows serve up a recipe in a pumpkin while back and I really liked that I idea. Pumpkin dip sounds awesome!
The potluck was a lot of fun! I’m kind of obsessed with my sparkly mason jar now.
