Last week was the first time I missed a WIAW since I started blogging, but I’m back at it with some delicious eats and hopefully some meal-time inspiration.

Easy Eats:
As a busy college chick I’m about fast-fixes, but that doesn’t mean I like sacrifice taste or nutrition.
This Salad was kickin’ – Red Cabbage, Avocado, Kale, Cashews, Walnuts, Craisins with Miso Ginger Dressing Fage 2% (totally worth the extra fat for a special treat) with walnuts, almond butter, strawberries & raspberry jam
Carob-y, Pumpkin Oats – Oatmeal with pumpkin butter and carob chips stirred in. I can’t get enough carob chips lately. I’ve been putting them in everything. Their less sweet than most chocolate chips but still have that rich taste.
Coconut-Peanut butter with toasted coconut, Carob Chips, Apple Butter & Pecans
Sun-dried Tomato, Chickpeas, Slivered Almonds, Feta & Craisin Salad with Sesame Ginger Dressing.
Getting Creative in the Kitchen:
Sauteed kale and red pepper, sweet potato with creamy greek yogurt-mustard sauce and fried egg
Gluten-Free Chickpea-PB Muffins (recipe to come soon!)
Farmer’s Market Feast: Pumpkin-Sage Ravioli with Sauteed Peppers and Onions with a side salad
Apple Picking Adventures:
It’s no secret I’m obsessed with apples. So when my mom came up to visit me in Ithaca Apple Picking was on the short list of “must-do’s.” We went to Littletree Orchards and I don’t think I’ve sampled/eaten that many apples in my life. Over the past week and half I’ve devoured my picked peck. So. Freakin’ Good.
I’m gearing up for my first ever half marathon in less than 2 weeks! I’m equally excited and nervous – but I’m so ready for the challenge.
