What I Ate Wednesday – Fueling Adventures

October 23, 2013 by Georgie @ The Long Run

Last week was the first time I missed a WIAW since I started blogging, but I’m back at it with some delicious eats and hopefully some meal-time inspiration.

Out and About Eats:

Northstar – Hueveos Rancheros.

What I Ate Wednesday

Easy Eats:

As a busy college chick I’m about fast-fixes, but that doesn’t mean I like sacrifice taste or nutrition.

This Salad was kickin’ – Red Cabbage, Avocado, Kale, Cashews, Walnuts, Craisins with Miso Ginger Dressing2013-10-22 18.23.08 Fage 2% (totally worth the extra fat for a special treat) with walnuts, almond butter, strawberries & raspberry jamWhat I Ate Wednesday Carob-y, Pumpkin Oats – Oatmeal with pumpkin butter and carob chips stirred in. I can’t get enough carob chips lately. I’ve been putting them in everything. Their less sweet than most chocolate chips but still have that rich taste. What I Ate Wednesday Coconut-Peanut butter with toasted coconut, Carob Chips, Apple Butter & PecansWhat I Ate Wednesday Sun-dried Tomato, Chickpeas, Slivered Almonds, Feta & Craisin Salad with Sesame Ginger Dressing. What I Ate Wednesday

Getting Creative in the Kitchen:

Sauteed kale and red pepper, sweet potato with creamy greek yogurt-mustard sauce and fried egg
What I Ate Wednesday Dinner Gluten-Free Chickpea-PB Muffins (recipe to come soon!)What I Ate WednesdayFarmer’s Market Feast: Pumpkin-Sage Ravioli with Sauteed Peppers and Onions with a side saladWhat I Ate Wednesday

Apple Picking Adventures:

It’s no secret I’m obsessed with apples. So when my mom came up to visit me in Ithaca Apple Picking was on the short list of “must-do’s.” We went to Littletree Orchards and I don’t think I’ve sampled/eaten that many apples in my life. Over the past week and half I’ve devoured my picked peck. So. Freakin’ Good.

What I Ate Wednesday What I Ate Wednesday What I Ate Wednesday What I Ate Wednesday What I Ate WednesdayI’m gearing up for my first ever half marathon in less than 2 weeks! I’m equally excited and nervous – but I’m so ready for the challenge.

Thanks to Peas & Crayons for hosting

Hope everyone is staying happy and healthy.

Question time:

  • Apples vs. Pumpkins? Who wins?
  • What’s your favorite meal to go out for?

That beet and goat cheese pizza looks amazeballs! I’m currently eating a vegan diet- and goat cheese is the only thing I miss!

Turns out you were supposed to put your arm through where I put my face and it looks like you’re holding your hand up to eat an apple. Nell and I did NOT get the memo- we just look like goofs
