Breakfasts

Soy Latte
Vegan Waffle with Granola, Candied Ginger and Almond Butter
Steel Cut Oats with Coconut, Pumpkin Seeds, Cashew Butter and Berries
Wrap with Banana, Strawberry Jam, Almonds and Peanut Butter
Lunches
Brunch Bowl with potatoes, butternut squash, salsa, guacamole, black beans, arugla and corn bread
Sweet Potato with maple almond butter, cinnamon and pumpkin butter
Carob Powder Pancakes with Banana, Pumpkin Butter, PB and Strawberry Jam
Butternut Squash Soup with Pumpkin Seeds and Coconut
Pink Lady Apple (the best.)
Dinner
Roasted Brussels Sprouts with Pomegranate seedsButternut squash soup and roasted vegetables

Vegan Update:
It’s pretty smooth sailing in vegan world, but I am considering breaking my streak for some thanksgiving pie.

Vegan pies aren’t hard to make! You could sub butter in the crust for coconut oil or Earth Balance vegan “butter”.

Wow makes me want to try vegan! I made a delish cauliflower pizza crust the other day!
Love cauliflower crust! When the month is done I’m going to try doing at least one(maybe 2) vegan days a week. It’s definitely not as hard as I thought it would be.
