A Very Vegan Thanksgiving

So I haven’t been the perfect vegan over the past month, but I was determined to prove that a vegan thanksgiving was possible and delicious. And guess what? It was! The concept baffled a couple family members but we all got a good laugh out of it in the end.

Luckily for me, I’ve been meat free for over 9 years so turkey wasn’t the obstacle. The veggie side dishes were always my favorite part anyway. The big obstacle was dessert. My mom knows how to make an incredible buttery, flakey, beautiful fruit pie.

So this year Nellie and I supplied the vegan entree and desserts. I’ll admit Nellie’s vegan apple cobbler kicked my pumpkin pie’s ass, but at least it looked kind of pretty?
Vegan Pumpkin PieI’ve included links to all the recipes we made. My take away? The cobler and the roasted squash were definitely the best. The cornbread and pumpkin pie weren’t the worst, but I don’t think I’d do them again. For the cornbread I’d definitely add some more spice and maybe some veggies. For the pie it was very rich and crust was a bit dry.

After the meal the family enjoyed our all time favorite game: Guesstures. It’s like a timed version of charades, needless to say my family gets quite into it.

    my take away from the vegan experience is that the egg substitute recipe is amazing ( 2 T water, 1 T olive oil, 1 t baking powder) in baked goods and Earth Balance is such a good baking ‘fat’. nommmm,nom,nomm. oh yeah, and the cranberry up-side-down cake was so delicious, too

    My fave pie is pumpkin! We got a pumpkin cheesecake this year, instead, but I still prefer the pie!

    I love reading about other peoples’ vegan Thanksgivings! Sorry that the pumpkin pie didn’t turn out well.

    My favorite Thanksgiving food is Tofurky! We make an awesome glaze for it and I use it as a sauce after it’s done. Yum!
