What I Ate (and cooked/baked) this Weekend

Hola, second semester senior here, chillin’, bloggin’ & cookin’. My first week of classes is over, which means, for once, I have some free time (this won’t last). When I have free time like this I like to try new recipes. When I get busy I usually end up eating simple go-to meals so it’s nice to have time to cook for a change.

Saturday Morning: Whole Wheat Pancakes

Fluffy yet hearty- these kept me full all day and now I have enough for a few breakfasts worth (or snacks)

This is also my first week of 1/2 Marathon Training. My workouts this week:

  • M: Strength Circut + 2 miles
  • T: 4.2 miles + arms
  • W: 6 x 400 m sprints (3 miles total)
  • T: 20 minute hills (2 miles)
  • F: 30 minute stair master
  • S: REST
  • S: 5 miles – had a PR! 41 minutes
  • Total: 16 miles
