Hola, second semester senior here, chillin’, bloggin’ & cookin’. My first week of classes is over, which means, for once, I have some free time (this won’t last). When I have free time like this I like to try new recipes. When I get busy I usually end up eating simple go-to meals so it’s nice to have time to cook for a change.
Friday Night: Healthy Baked Falafel with Greek Yogurt Tahini Sauce
Had the leftovers the next night
Saturday Morning: Whole Wheat Pancakes
Fluffy yet hearty- these kept me full all day and now I have enough for a few breakfasts worth (or snacks)
Saturday Night: Coconut Granola
My own creation, recipe coming soon! (Tuesday).
This is also my first week of 1/2 Marathon Training. My workouts this week:
- M: Strength Circut + 2 miles
- T: 4.2 miles + arms
- W: 6 x 400 m sprints (3 miles total)
- T: 20 minute hills (2 miles)
- F: 30 minute stair master
- S: REST
- S: 5 miles – had a PR! 41 minutes
- Total: 16 miles
Your Turn:
- What was the best thing you’ve cooked (or baked) up recently?
- Do you have a favorite place to get recipes?
Glad to hear that you made the falafel and tahini yogurt sauce and that they turned out well. They look beautiful! Thanks for linking to my recipe!
