What I Ate Wednesday: Life Gets Hectic

Today is a great day to share what I ate because it was all over the place, which, when you’re busy, often becomes the case. I try to plan out my meals to a.) save money at the grocery store b.) save time in the morning and at meal times and c.) stay healthy without the stress of cooking every meal.WIAW Life Gets Hectic


You can plan all you want but sometimes life happens. Sometimes you’re hungrier than you thought, sometimes you lose your appetite. Sticking to that schedule can be the key to staying healthy, but listening to your body is even more important for your health, sanity and happiness. Mind you, as someone who’s struggled with eating issues I don’t always get this right, but I’m certainly moving in the right direction.

So this is what I ate Tuesday (1/28) < my half birthday haha!

Breakfast of fage 0% with pumpkin butter, blackberries and homemade granola was eaten when I woke up before getting ready for class at 9am

WIAW Life Gets HecticSnack was eaten after class/meeting at 1pm before I headed to the gym- this was the first time I’ve tried Kit’s Organic bars which are by far the best option Clif Bar makes, they’re quite similar to Lara bars but have more seeds and lots of unique flavors – I also ate an apple and bought a red-eye before the gym as wellWIAW Life Gets Hectic

Late Lunch was scarfed down at around 3:30 after the gym

Kale, tomatoes, red pepper, pecans, edamame, avocado with balsamic glaze

WIAW Life Gets HecticSalad was the size of my face.WIAW Life Gets HecticPost-salad homemade carob-pb protein bar – I wasn’t going to post the recipe but they’re so good I might tweak it a bit and post!WIAW Life Gets HecticSpontaneous Froyo Trip was enjoyed with my best friend before we headed to our meeting

I mixed tart with cake batter and topped it with coconut, almonds, a couple mochi and some marshmallowWIAW Life Gets Hectic

Dinner was thrown together at 9:30pm after meetings

Sweet Potato with Cinnamon Raisin PB & Banana (guess I had a sweet tooth today?)WIAW Life Gets Hectic

I also enjoyed some carob covered raisins throughout the dayWIAW Life Gets Hectic

Normally, I would want more green in my dinner, maybe less snacking and froyo wasn’t planned but rolling with the punches is key. I’ve struggled for years to find the right balance between what’s the best choice for your body and what’s the best choice for your sanity.

Some days getting up an hour earlier to work out is worth it, but sometimes its not. It’s great to push your limits, but it’s even better to know yourself and trust your body when it’s asking for a break. It definitely takes making mistakes to know what the right choice is for you.

    I would say that a food that is more indulgent that I LOVE and is totally worth it would be pizza. I’m just so damn addicted to it lol. I can hardly ever say no to pizza.

    My go-to snacks would probably be an apple, carrots, or hard-boiled egg.

    You had a great, perfectly normal, day of eats in my eyes. YOLO my friend. Some days you will eat more ‘healthy’ (relative to your own definition) than other days. Life goes on. Just eat and be merry ๐Ÿ™‚

    I am glad you went on an impromptu yogurt trip, that’s awesome. Personally, I’m not on the froyo bandwagon and I just go for the real ice cream – keeps me more satisfied.

    I hope you have a wonderful day! And btw, your edamame/salad dish looks soooooo good!! I’m gonna have to pick up some balsamic glaze b/c that is a fabulous idea!

    Also, I just want to let you know that I have also had food struggles in the past, but I’ve learned how to move past them, but it took a while.

    For instance, this morning I had a typical oatmeal breakfast, and then an hour later, my stomach starting GROWLING for food. Before, this would have made me sooo happy and I would wait until lunch (BAD IDEA). Now I go eat more. So I ate two breakfasts all before 9 am…big deal. My pants still fit the same lol. ๐Ÿ™‚ Again, it wasn’t easy getting to this point, but you will!

    I try to pack healthy snacks at work and end up eating them if I’m hungry or not (usually thanks to boredom). This can be carrots, apples, or even Kashi crunch bars. I am always a fan of froyo and while I end up testing out all sweets, froyo would be my treat of choice.

    You really must share the protein bar recipe. It sounds good. But really, can you ever go wrong w/ pb & chocolate?

    Go to snack: Fruit & nut butter, carrots & nut butter, smoothies or yogurt bowls.

    That salad looks so good! Did you sautee the kale before? Also, white balsamic glaze do you use?

      It was epic, well as epic as a salad can be. The kale was raw, but sometimes I’ll saute (especially if it isn’t the freshest). I used Trader Joe’s it’s wonderful and makes everything look pretty too.
