Breakfastpalooza

If you know me well, or at all, you probably know I like breakfast. Actually, that’s kind of an understatement. For me, breakfast is a non-negotiable. It’s my favorite meal of the day, my favorite meal to go out for and in general I love the morning!Breakfast

However, during busy weeks I often stick to my classic combo of plain greek yogurt with some sort of jam and/or fruit plus some nut butter and some kind of sprinkle of nuts, seeds or coconut. It’s great. It really is, I mean if I didn’t love it I wouldn’t eat it almost every day BUT I wanted to challenge myself to get out of my breakfast comfort zone. (Also, take note that I’m laughing at myself as I write this)

This past week I challenged myself to do a different breakfast every morning. I did fail once- on a really busy day I stuck to my standard greek yogurt but the other six days I mixed it up.

So for WIAW this week I’ll be sharing a glorious week of breakfasts.

Sunday Brunch: Soy Latte & a Veggie “Sconewhich” from Carriage House in IthacaLatteBreakfast Overnight Oats in the end of my PB& Co. Cinnamon Raisin Jar (best flavor)BreakfastWhat I learned:

I love mixing it up and I’m so glad I challenged myself. In fact, I’m going to keep going and try to mix up my breakfasts from here on. That doesn’t mean no greek yogurt for breakfast, it just means that I’ll be looking for other things to try as well. I’m always looking for new recipes so if you have any you love please send them my way!

Here are some other fun eats I enjoyed this week:

I made some delish whole wheat pizza which I now will enjoy for an entire week! I remember when I was younger I never appreciated leftovers, but now that I cook for myself it makes life x1000 easier during a crazy week to have healthy, delicious stuff available when time is crunched.Pizza It was a balmy 25 F˚ this weekend so obviously I had to treat myself to a iced soy latteIced latte Filled this acorn squash with quinoa, walnut, almonds & edamame and had a side of sweet potato fries and boy was it awesome!Veggie Dinner Got a lovely valentine’s day package from my mom filled with ginger chews (my favorite) and a “cocoa the whale” in  Pantone mug (which I’ve wanted forever). <3Valentine's Day Made these irresistible s’mores bars. S’mores are my absolute favorite dessert and I wanted to give my team (for a school project) a little treat (bribery with baked goods is cool right?) The key to these was making them with quality chocolate. I chose Cadbury Dairy Milk – gotta represent my home country! Finally, I’ll leave you with this gem, a selfie in my $1 fish sweatshirt & doggie hat because I’m a second semester senior and my fashion sense has gotten… goofy?     All your breakfasts look delicious! I am boring and tend to eat the same thing for a long period of time. Over the summer, I was having ced coffee with PB on toast. Now I’m having hot coffee with oatmeal. I should get more creative!

      I’m the biggest creature of habit, which is why I had to challenge myself. I do LOVE oatmeal <3

    I love that you challenged yourself to switch up your breakfast routine! I’ve been trying to do that lately as well because I get stuck in the oatmeal with peanut butter and banana phase. I love the dish but I know there is so much more out there to enjoy for breakfast! Your bagel with avocado sounds divine!       I totally agree, it’s so easy to get stuck in a rut, albeit healthy, but still a rut. Thanks for the recipe suggestion! I’ll definitely check it out.
