Several weeks ago the friendly folks at Evoke Foods contacted me to see if I’d like to try their muesli. As you probably know by now, I’m a huge breakfast fan and muesli is something I enjoy whenever I’m over in the UK, so I was delighted to try this new US brand.
Another thing that got me excited about the brand and this product is that their ingredients list is simple (always a good sign). All it is are oats, nuts, seeds and dried fruit. When you can put your ingredients on the front of your packaging that’s always a good thing.
For anyone new to muesli it’s a healthy cereal made with a base of oats and has a mixture of nuts, seeds and other super foods. It’s often eaten with milk or yogurt and can be eaten hot or cold. I’ve been eating my muesli with my yogurt, with chocolate hemp milk and almond butter and on top of my smoothie bowls. For more inspiration check out Evoke’s How to Eat Muesli page.

I was lucky enough to try each of their 5 varieties. My favorites were the Athletes’ Fuel, Antioxidant Muesli and Super Muesli. They had tons of crunch and yummy mix-ins like cocoa nibs, gogi berries, almonds, cashews, pumpkin seeds and coconut.

No-Bake Muesli Bar
These little bars (or bites) are raw, vegan, can be gluten free (depending on which variety you use), egg-free, dairy free, and most importantly totally delicious.
Ingredients
- 1/2 cup of slivered almonds
- 1/2 cup of muesli
- 6 pitted dates (chop into small pieces)
- 2 tbsp of agave nectar (or honey)
- 1 tbsp of coconut oil
Directions
- Blend almonds and muesli in food processor.
- Add chopped dates, agave and coconut oil and blend until smooth.
- The dough will probably turn into a ball in the food processor, that’s totally fine.
- Take a baking pan approx. 8 sq. inches lightly coat with coconut oil (so it won’t stick.)
- Flatten dough onto the tray until so that the bars are at your desired thickness.
- Keep in the freezer for 2-3 hours before cutting into 1 inch squares.
- Store on a covered plate in the freezer.
