What I Ate Wednesday: Bring on the Fall

It’s really starting to feel like fall around here! Yesterday I wore a sweater and was comfortable outside. Ahhh pure bliss.

As you might have noticed in the picture below it’s even hot coffee season. Ok, ok I know you know I’m obsessed with iced coffee, but in the AM a little mug of hot joe is such a nice way to start my day. I love the ritual of using my french press. Speaking of starting the morning…

For Breakfast (7am)

Chocolate Coconut Chia Seed Pudding with raspberries, homemade almond butter & sunflower seeds.

What I Ate Wednesday Vegetarian

AM Snack (12pm)

The first honey crisp apple of the season (may the crunching begin!)

Snack (12pm)

Homemade Peanut Brittle (a co-worker brought in)

Lunch (2pm)

Power bowl salad: Baby kale, chickpeas, carrots, edamame, sunflower seeds, pecans, quinoa & dat avocado

Afternoon Snack (4pm)

I found this Under Armor hoodie at TJ Maxx. It’s just like my Lululemon Scuba hoodie but cost about a third of the price. It was finally cool enough to wear on my evening run/walk.

Speaking of said walk it was a stunningly gorgeous sunset near my apartment. I’m far from a “Jersey Girl” but the sunsets are ok, I guess.

What I Ate Wednesday Vegetarian

Upon my return I shoved a bowl of food in my face

Dinner (8pm)

Acorn squash, red bell peppers, edamame, avocado, hummus, sunflower seeds & chickpeas

Dessert (9:30pm)

Chobani Cinnamon Apple yogurt with almond butter, carob chips, purely elizabeth granola

    That sunset! Would you mind me coming over for a visit?? It’s so beautiful. My current walking route – if you want to call it that – is blah. My favourite time to go for runs is the evening as I [night owl right here] find it’s when I perform best. But morning runs have something about them, too. Only the early wake-up call is not a favourite of mine.
    Also, I want you breakfast. And lunch. Actually, I want to recreate all of your meals. I figure I unconsciously knew when I picked up a bag of edamame with no purpose in mind last week …

      I’m the same way about evening versus morning. AM is nice and peaceful but I have the most energy in the afternoon. I <3 edamame!

      I concur!!!!! Most restaurants don’t even offer salads as appetizing and as smexy as Georgie’s. LOL

      Thaaanks! The secret: prepping my ingredients on Sunday. Now I just a fridge full of ready to make salad ingredients (aka life is easy)
