Less than 5 Ingredients – Vegan – No Bake – Raw – Gluten Free

Too good to be true? Nope these energy bites really are stupid easy and freaking delicious.

Inspired by my favorite energy bar, the coconut creme from Larabar – I blended together some simple, clean delicious ingredients.

These guys are perfect for that 3pm snack attack and will satisfy your sweet tooth and energy levels.

Coconut Larabars

These Coconut Cookie Dough Bites will satisfy your sweet tooth and give you a burst of natural energy.

Coconut Cookie Dough Energy Bites

Makes 22 // Prep time 25 mins

Ingredients

  • 10 pitted medjool dates (about 1 Cup)
  • 1 C of unsweetened shredded coconut
  • 1/2 C of Raw Cashews
  • 1/3 C of Cashew Butter (or almond butter)
  • Pinch of Salt
  • Optional: Chocolate chips

Directions

  1. Add all ingredients into food processor
  2. Blend until smooth dough forms (takes approximately 4 minutes)
  3. The dough will have a lot of excess oil
  4. Squeeze this out over a paper towel (may take a few towels)
  5. Roll dough into 1/2 inch balls
  6. (Optional: add chocolate chips and roll until combined)
  7. Let chill in fridge for 30 minutes before eating
  8. Store in airtight container in fridge for up to 3 weeks (longer in freezer)

    These look (and sound) so delicious Georgie! My fave 3pm snack is so weird… pickles and a hard boiled egg!

      Hard boiled eggs are the BEST I feel like I’m eating a ball of energy (is that weird?) anyway they’re definitely a power snack
