I woke up this morning, planning to capture a day of eats and possibly highlight some of the cool spots around the office. I remembered to capture my açia smoothie bowl, which also included banana, cherries, raspberries & kale with some granola & coconut. You’d think this awesome power breakfast would give me enough of a brain boost to remember to take pictures of the rest of my food… but it didn’t.

So let’s go to Plan B:
Food Prepping, building blocks for easy meals
Which, I actually like better, because food prep is something I don’t talk about enough.
Usually I sit down on Friday or Saturday to plan what food I want to make for the blog and what food I want to eat that week. I’ll go shopping on Saturday, make and photograph recipes (which I chow on later) and prep extra food for the week.
I try to prep veggies, proteins and complex carbs that I can mix and match into salads and Buddha Bowls. Generally I try to buy and make veggies that are in season, which means squash and brussels sprouts have been on heavy rotation. No complaints here.
This Week I Prepped
1 giant acorn squash (lightly coat in olive or coconut oil, season and bake for 45-60 mins at 375)
Farro Grains (great for making a salad more filling)
Brussels Sprouts (lightly coat in olive or coconut oil, season and bake for 45-60 mins at 375)
Sweet Potatoes (lightly coat in olive or coconut oil, season and bake for 45 mins at 375)
Hard Boiled Eggs (boil in hot water for 15 mins – add pinch of salt to make peeling easier)
Tahini Sauce (not pictured)

2 of My Favorite NYC Sips
While I was in NYC last week for work I maaaaay have upped my smoothie game. I tried a new(for me) spot: Juice Generation. It didn’t disapoint. I had Mr. Greengenes (Kale, Spinach, Banana, Mango, Almond Milk – topped with almond butter)
Something about drinking a giant green smoothie in the AM makes you feel like a boss… maybe that’s just me.
I also tried the almond butter bliss açia bowl (on a diff day… just had to make this obvious :P) It had almond milk, banana, açia, coconut topped with almond butter hemp granola and banana. I thoroughly enjoy eating/drinking smoothies out of a bowl so this smoothie was a hit.
Ah yes, it appears I have an almond butter problem… well I don’t really consider it a problem, yet.
Another one of my favorite NYC stops is Birch Coffee. If you’re the kinda kid who will happily drop $4 on an iced coffee because you can’t deal with mediocrity then a.) let’s be friends and b.) you’ll love Birch. I also use a coffee “alter-ego.” Her name is Gigi. She’s everything I am and everything I’m not. A sassy diva who dances in the rain but knows how to get shit done. Oh yeah, she drinks a shit ton of coffee.
It started a long time ago when my mom and I used to make up ridiculous names at Panera to see how they would say them. The only problem was the names got so complicated we usually wouldn’t remember what we said. So I stuck to one name: Gigi.
This was an afternoon pick-me-up latte acompanied by a treat-yo-self ginger snap cookie. (Am I a little predictable? Yup. Do I care. Nope.)

Oh gosh – the names are always wrong aren’t they? Mine is always mis-spelled if it’s even close to correct. I get “Loren” quite frequently. Have a good one! 🙂

hmm I have never thought about a coffee name. I am one of those boring people that puts my real name. I would pick Mia or Chloe for some reason short, fun names seems like something that would give me a pick up during the day!

Loving almond butter is not a problem! I’m loving this weather because it means I can eat my hot oatmeal every day out of my almond butter jars.

Hello, there! 🙂 Your food prep is a lot like mine — usually involves sweet potatoes/squash, roasted veggies (hellooo brussels) and hard boiled eggs, at the very least. And omg that acai bowl! I stillll have yet to try … that photo is definitely persuading me!
