Late Night Light Bites: the Best of October

Hiya, Hola, Hey there, Qué Pasa, Sup? Hope everyone had a fun Hallo-weekend. This year was mega low key. I dressed up by writing “book” on my face *a la the Office*. Nothing like last year’s epic 3-day college-style halloween.

A year ago I was running my first half marathon. I can still remember how much of a rush it was. I’m not out of the running game forever, but for now I’m happy to cheer from the sidelines.

It was a pretty rollercoaster month. Thanks for letting me talk a bit about dealing with my anxiety. I really appreciated everyone’s thoughtful comments and perspective. Luckily the month ended with some amazing news, that I can’t share quite yet (I know, it’s that the worst when people do that?) All in good time.

Your Favorite Recipes in October

I was so happy to see you all loved the Chocolate Chunk Pumpkin Muffins as much as I did!

Another hit on the savory side was the Fall Harvest Salad (I’ve been eating some variation of this all fall!)

    I want alllll of your food, all of the time. 😀 I had a really similar salad yesterday at a restaurant, with some vegan pecan (??) chorizo added. It was awesome! My fave thing I made in October was Ambitious Kitchen’s chocolate chip pumpkin zucchini bread…. I dream about that thing. ;D ;D And okay, I am texting you to guess the news.

      Ooo vegan chorizo?! I gotta try that. I’m obsessed with everything Ambitious Kitchen makes. She nails it with healthy, but actually delicious recipes

    The best recipe I made this month was peanut stew from The Vegan Stoner cookbook. It was so easy (only five ingredients) and perfect for fall! I also went overboard with pumpkin smoothies because I bought pumpkin spice almond milk. It was delicious…but I need a bit of a detox. I look forward to November for more bright colors and the appropriate weather to wear wooly scarves!
