What I Ate Wednesday: on the Whole30

Hi friends. Happy Wednesday. This past week has been filled with plenty of highs and lows. Moving can be really stressful, luckily it seems to get a little easier each time. Classic #20somethingproblems aka learning to be a functioning human on your own (but actually still relying on the support of a 1000 people).

But enough of me whining, let’s talk about some Whole30 shenanigans! On Sunday I talked about Why & How I’m Doing the Whole30 and Monday I went into detail on how to Plan, Shop and Prep for Success (with a free printable).

So I’ll be sharing the last two days of Whole 30 goodness. My sugar cravings and hunger/appetite are a lot lower than normal, but I think it’s due to the fact I’ve had a bad cold. Either way I’ll take it (minus the cold).

Monday

Meal 1: Noat-Meal (Bananas + Eggs + Flax) with berries and sunflower seeds

Meal 3: Kale, avocado, butternut squash and tuna cake (adapted from the Little Honey Bee)

Tuesday

Meal 1: Frozen berries, spinach, kefir, frozen banana and vega protein powder (here’s why I’m still making smoothies on the Whole30)

Meal 2: Arugula, Avocado, Tomatoes, Almond Slivers, Sunflower Seeds, Olive Oil, Tuna Cake adapted from this recipe and tahini

Snack: Apple & Homemade Coconut Larabar

Meal 3: (ok, this ain’t the prettiest) but delicious – Kale, sweet potato hash, basil egg muffin and walnuts

    YUM. I could definitely do Paleo if you cooked for me ha! I want to try those coconut larabars. I love coconut and am looking to try another snack recipe.

      They’re so easy to make! (plus you save a lot of money) I feel like having a fellow blogger for a roommate would be ideal – no questions or weird looks when you start snapping pics of all your food, always having someone to take a photo for you, alas I can dream…

      The texture is like scrambled eggs and it tastes like bananas, interesting, but I’m a big fan especially with some crunch (from seeds or nuts) and a little nut butter. I was impressed that I wasn’t even hungry until 1pm (usually I’ll have a mid-morning snack) – but regular oats are fab too!

    I think it’s funny how we always try to explain that our crappy looking meals are actually good…I think some of my messiest meals are always the best, but I understand how pretty photos make everyone swoon. HAHAHA! Usually when I am taking a photo of my food I’m ready to eat my hand off, so I don’t care…It’s true life though! 😉

      Ahh so true! I’ve had times where I’ve just started eating and half way through I think “damn, I wanted to take a picture of that, ahh well” – I guess I love WIAW posts so much because you get a sense of how people eat when they aren’t making recipes for their blogs which can be just as inspiring for meal ideas anyway

    I am also doing the whole 30 yet my eats look much different than yours! It would be def hard doing it not eating any meat!

      Luckily eating fish makes it a bit easier. However, I’ve been a pescatarian so long its second nature. Loved looking at your eats too! The breakfast fritatta looks bomb

    Nice eats buddy! I did #wholeArman and made modifications to it (potatoes, cheese, protein powder)- It didn’t really benefit me overall but it was a good experience- It definitely broadened my kitchen repertoire!

    Your salads look amazing! So many good toppings:)

    I always like having homemade granola bars in our house. They’re so needed when living in NYC…you never know how long you’ll be out in the city so they’re great to have on hand!
