Isn’t it fitting that my first recipe of March is green? I don’t typically get too into seasonal trends on the blog, partly because I’m admittedly not a festive human, but mostly because I’m too lazy to keep up with the all the foodie holidays and trends. So, full disclosure this smoothie isn’t green because it’s March, it’s green because it’s a kickass smoothie that I couldn’t wait to share with you!
I really should call it the Sunday morning smoothie because to me it tastes like what a Sunday would taste like if it were a smoothie: creamy, sweet, bright and refreshing. Sometimes I get a little excited in the morning and go overboard and throw every fruit in my freezer, green in my fridge and flavor boosting ingredient in my pantry into the blender. Admittedly sometimes this works, but Sundays are for simplicity. Banana and mango create a rich, sweet and creamy base, while the spinach and coconut milk balance them out.
I’m a big fan of Sundays. Often I reserve this day to play in my kitchen. I pop on my favorite Pandora station (lately it’s been a mix of stand up comedy based of Mike Birbiglia) and chop and prep and mix and roast and blend. If I have a recipe that’s blog ready I’ll prep it in the kitchen and shoot it in my living room which has fantastic light during the day. This past Sunday, I think I might have used 90% of my tupperware containers with all the food and ingredients I prepped which is saying something because I have quite a collection.
I’m not embarrassed to say that having a fridge-full of prepared food makes me slightly giddy. It’s the simple things right? It was probably even more exciting because I worked really hard to get my grocery bill down, which for me isn’t an easy task. Like I mentioned before, I have no problem dropping silly amounts of cash on expensive kombucha, coffee, nut butters or coconut oil but I couldn’t tell you the last pair of shoes I bought. Priorities?
Anywho – Sundays are quite lovely, whether they’re spent in the kitchen alone or going for a walk with your sister, talking on the phone with your friend you haven’t spoken to in too long, trying a new yoga class or even getting a head start on the week ahead. I hope if you’re sipping on this smoothie even if it’s not a Sunday it will still give you that same peace. Cheers!

Your Turn:
- What’s your favorite Sunday activity?
- The one food item you love to splurge on?
Yup…I splurge on the same things. I went to the grocery store like 3 times last week. No shame 😉 I’m obsessed with all things coconut so this sounds great!
No shame at all! My typical routine is Trader Joe’s for the staples then Whole Food’s for the specialty things and I’ll probably forget something or need an extra ingredient or two for a new recipe
I am the sammeeeeee way as far as groceries go…. I’d rather spend money on food than clothes. Although, I love clothes too so it’s actually kind of tricky haha. This smoothie… SWOON.
My mentality to clothes is always “oh I’ll save enough to go on a shopping spree in a few months” then I end up spending all that on expensive groceries…whoops!
I LOVE a fridge and freezer that is FULL of meals for the week! My Sunday was ridiculously productive it kind of freaked me out and made me giddy too…8 mile run + food prep + work + laundry + taxes…BAM! Cannot wait to make this…I feel like I should be drinking it on some tropical beach! 🙂
Woah! That is incredible. There is seriously some kind of magic in morning runs. They just make your days so productive (or at least feel that way because you can at least say you ran)
Such a beautiful smoothie!! I don’t actually use mango in smoothies for some reason, but I definitely need to give it a try!! And smoothie bowls are literally a go to meal for me in the summer months when it gets too hot for me to turn on my stove or oven…
thank you so much Kat <3 In the summer I barely turn the oven on too
Same, same, same to all of this, love it! TJs and Whole Foods run + a workout + food prep and pictures in daylight is one of my favorite parts of the weekend. Also, mango smoothies are my faves – this looks delish. Also, on another note, what plug-in are you using for “Related Posts”? Thank you 🙂 So glad to have found your site!
Frozen mango is so yummy! (plus you don’t have to deal with cutting them up) Thank you so much for the kind words – so happy we connected through Bai. The plugin is called Shareaholic and has a ton of great social sharing features too!
I am loving how THICK and FROTHY this looks….. Ha Ha, kinda sounds WRONG – but… Only in the most delicious of ways! 😉
So wrong and so right. Who doesn’t love it thick and frothy?
I loooove those toasted coconut chips! I never thought about adding them on top of a smoothie. That would be awesome!
I love toppings on smoothies because they add a great texture. The coconut chips are seriously addicting <3
This looks do refreshing and it’s a perfect way to stay healthy for the up coming spring!
Thank you Yelena! Doesn’t the color just scream spring? Or maybe that’s just wishful thinking- thanks for stopping by
