Mango Chia Pudding

This mango chia pudding is inspired by the Mango Lassi, a traditional Indian yogurt drink. It’s sweet, with a subtle tart finish from the probiotic packed kefir.

I guess you could say I’m having a bit of a mango love affair this week. First a raspberry mango smoothie and now this mango chia pudding. Allow me to explain: Trader Joe’s Frozen Mango…end of explanation. I honestly don’t know how it’s so good. Sweet, creamy in texture, I eat it frozen out of the bag, and it in smoothies, and on yogurt, and in recipes. MANGO ON EVERYTHING.

I guess that’s just a thing I do. When I like a food it finds it’s way in everything. Coconut, almonds (and their butter), tahini, arugula, zoodles, avocados, granola, berries, ginger, sunflower seeds – those are just a few staples that I can’t get enough of. I know the whole “everything in moderation” thing is supposed to be good for you, but I suck at it.

When I do something I either do it or I don’t. Like reading, I can’t steadily read. I either plow through 3 books in a month or I just don’t read. When I first started running I definitely took it a little over board. Being an intense chica is blessing and a curse. I love falling in love with new ideas, hobbies, passions…foods. It’s exciting and exhilarating. I love the feeling of pouring everything you have into something. Or often in my case, finding new ways to eat my favorite foods. But it can be really tough to sustain that intensity over a long period of time and I’ve crashed and burned on many occasions.mango chia pudding

I think as I’m getting older I’m getting a little better at this whole “balance” and “moderation” thing. Learning from those crashes, but trying not to extinguish that “fire in ma belly” excitement too quickly. I’m always proud when I can find balance and moderation. I guess that’s why I rely heavily on routines, because when it comes to moderation that’s what works for me. Things I’ve been able to sustain are my workout routine, healthy meal prepping, this blog.

But it’s important to let myself go overboard sometimes. Too much moderation and life get’s boring. So really what I’m trying to say is I’ll keep obsessing over mangos until Trader Joe’s takes them away again.

Mango Chia Pudding
Recipe Type: Dessert
Cuisine: Vegan/Vegetarian

Prep time: 10 mins
Total time: 10 mins
Serves: 2
This mango chia pudding is inspired by the Mango Lassi, a traditional Indian yogurt drink. It’s sweet, with a subtle tart finish from the probiotic packed kefir.
Ingredients
  • 1 Cup of Frozen Mango
  • 1 Cup of Plain Unsweetened Kefir
  • 2 tsps of Maple Syrup
  • 1 tsp of Vanilla Extract
  • 1/2 TBSP of Coconut Cream
  • 3 TBSPs of Chia Seeds
Instructions
  1. Place frozen mango and kefir into a high powered blender
  2. Blend until smooth
  3. Add the maple syrup, vanilla extract and coconut cream and blend
  4. Pour mixture into a medium container (like a mason jar)
  5. Add the chia seeds stir until the mixture is fully combined
  6. Let chill in the fridge for at least an hour (best if left overnight)
  7. Optional:
  8. Top with extra mango and crushed pecans

    I love your recipe posts because they are always insightful and thought-provoking…and delicious! Nut butter makes it’s way into everything. As do avocados!

      Thanks Em! Nut butter and avocados are always a good idea. I recently came to the conclusion that if I did count macros I’m almost positive more than half of my foods would be considered “fats” … and I’m not mad.

    I hate moderation….I never use the word because I hate it so much! Haha!
    And I feel you on doing something or not! No kinda-sorta!
    If cinnamon counts…I’m pretty sure I put that in all my meals everyday….addiction!

    Love Trader Joe’s frozen mango- cutting a mango is not something I’ve ever mastered so it’s the perfect substitute. I’m trying to get back on the chia seed pudding for breakfast club for summer- thanks for some inspiration 🙂

      Same! It’s so tricky, and it’s so tricky finding the right mango – frozen (especially TJ’s) is the way to go. Chia pudding for breakfast is great because it’s so portable.

    Looks amazing! I absolutely adore frozen mango as well! It is my favorite fruit to eat frozen! I think I’ll make this with fresh mango though since that’s all I have on hand right now!

      Oh yes, gotta have those healthy fats! Lately I’ve been adding a little garlic salt/salt combo to my avocados and it’s really makes the flavors and textures pop. Have a great weekend Katie <3

    I hadn’t thought to make chia pudding with kefir! Good call. I’ve only ever made it with liquids like almond milk or .. bai 😉

    This looks delicious!!! Oh my word…yum! …and I’m not gonna lie, I LOVE moderation and balance… they’re kind of huge in my “food philosophy”… sadly, my tummy doesn’t handle dairy and gluten or soy well, so I can’t eat EVERYTHING in moderation, but I like to eat what I can in moderation (if that makes sense!) 🙂 I like to find a middle ground and am pretty slow when it comes to changing my diet. I find that my body likes to eat just about the same amount daily, I’m so routine! haha, but everyones different! I’m glad that you’re finding what works for you!!

        Ohhh… I’m sorry! I just meant that some of my friends are more “extreme” when it comes to healthy eating and exercise than me! haha, I like to eat daily treats and prefer gentle exercise… but seriously, I think you are doing a great job!
