It’s funny, some of my favorite recipes, ones that make it on the blog, happen when I’m least expecting it. What often happens when I’m working on recipes is that I search for inspiration from the grocery store, from a recent restaurant experience, Foodgawker, Pinterest. However, sometimes I’m just playing around in the kitchen throwing things together randomly, curious to see what will happen. This chia pudding was a result of one of those random experimentations.

In the past year I’ve become increasingly obsessed with a.) almond butter b.) literally all things coconut and yeah, obvi chocolate has always been a thing. I never grew up a huge fan of the almond joy, but now that’s one of my favorite flavor combos. Maybe it’s just the sheer versatility of all three flavors, but when they come together they can’t be stopped? It’s like watching a movie with all your favorite actors. Each one is so epic and together no matter what they do you automatically love it.

Meanwhile, during one of my frantic kitchen experiments I wanted to try creating a blended chia pudding rather than keeping the seeds whole. I had seen this technique a couple times and was super intrigued because one of the downsides of chia, despite being insanely versatile, is those little effing seeds get everywhere including your teeth once you think you’re done consuming them. Not only would blending eliminate the teeth dilemma, it would also (if successful) deliver a much creamier pudding experience, which is often what I’m looking for in a dessert.

Sure enough with a little blending, a little chilling and some ratio tweaks, this pudding turned out pretty awesome. No seeds in your teeth, just a creamy chocolatey pudding with hints of coconut and almonds. I definitely recommend adding a little extra coconut and chocolate to top it off so you can add back a little more texture and I don’t really need to give you an excuse to add a little extra chocolate.

Your favorite classic candy combination comes together in this deliciously creamy blended Almond Joy Chia Pudding.
Ingredients
  • 1 1/2 Cups of Almond Milk (or coconut milk)
  • 3 Tbsp of Chia Seeds
  • 3 Tbsp of Shredded Coconut
  • 2 Tbsp of Cocoa Powder
  • 1 Tbsp of Almond Butter
  • 1 Tbsp of Maple Syrup
  • 1/4 tsp of Almond Extract
  • Topping:
  • Pinch of coconut
  • Handful of dark chocolate chips
Instructions
  1. In a blender (or nutribullet) blend almond milk, chia, coconut, cocoa powder, maple syrup and almond extract.
  2. Let chill in the fridge for at least an hour to allow to set.
  3. Sprinkle with coconut and chocolate chips.

    I haven’t tried blending chia seeds to make pudding before, buuut I’m thinking it might make the texture less… frog spawny? Either way this looks amazing 😉

    Is it like a thing to start loving Almond Joys after hating them as an adult? Does any kid actually like coconut? I haven’t ever blended my chia pudding but um… I love chia pudding obvs so I gotta stick it in the blender soon!

    Need this! I have grown to love chia seeds, cuz I still can’t get behind chia pudding cuz the texture is just all wrong. But blended chia pudding? I can get behind that 😀

    I love the look of this! I have never been a huge fan of chia pudding but I think I will like it blended much better than with the whole chia seeds. Can’t wait to try this!
