WIAW: What I Eat When I Get Lazy

Food lazinesss.

(I think) It happens to the best of us. Over the almost 2 years I’ve had this blog, I’ve gotten really good at planning, shopping, prepping and cooking healthy delicious food with out too much hassle. I’m no gourmet chef and often my meals don’t take much prep at all, but they almost always feature some kind of fresh produce, healthy fat and vegetarian protein. And I really enjoy the process along the way. Honestly, I hope I make it look easy because most of the time it is… until sometimes it isn’t.

For the past couple days I’ve felt an uncharacteristic sense of apathy towards my food. I’m sure for some people this isn’t too uncommon, but for me it feels kind of odd. It started from not having much food left in my fridge after a weekend away, but not wanting to grocery shop because I’m going away again, and was fueled by the muggy weather and my recent bout of the blues. So with few ingredients to play with, I’m basically trying to eat as healthy as I can without much to work with and without having to make too much of an effort.

What I Ate Wednesday

Breakfast: Overnight Oats

Lunch: Siggis Yogurt, Sunflower and Pumpkin Seeds & an Earnest Eats Granola Bar

    I’m in a food laziness rut too. I’m normally pretty good with planning but lately I’ve just been figuring out my meals right before I eat them…meaning eating snacks and random grab-and-go meals a lot. But for being in a funk, you sure make pretty meals 🙂

    Food laziness happens to me every other day–it just depends how busy my day is. I LOVE prepping food (obvs) but on super busy days I don’t have time/patience. Some of my go-to’s are cooked kale, chicken sausage, turkey burgers, baked potato, smoothies, etc.

    These meals may be lazy meals but you still make them look amazing!! I get lazy with my meals sometimes to and when I do, they don’t look nearly as appealing!

    I get food laziness a lot, especially when I have back-to-back weekends away. I don’t want to buy too much, so I usually don’t buy anything since I will only be around for a few days. I try to always keep some frozen foods on hand for days I am lazy, like veggie burgers or frozen stir-fry, so I can still eat something decent without having to put too much effort into it.

      That’s smart – I should probably grab some more go-to healthy frozen veg/meals for when this happens in the future.

    Girl I get hit with the lazy quite often. Eggs are a big go-to for me, as well as fruit and nut butter. And yes, I have done a fridge clean out especially in college if I was moving to another apartment or something. I always felt a sense of accomplishment when I got rid of everything without wasting 😀

      Same! I’ve never been so excited to see an empty fridge – that first grocery shop when I come back will be glorious. Eggs are a life saver – so nutritious and so easy

    I am kind of feeling the same way lately too as I am in the process of cleaning out the fridge and I just look at it kind of like “blah”. Looking forward to enjoying myself this weekend away and eating a whole different variety of foods, that aren’t similar to what I am bored with here. HA!

    I actually really enjoy cleaning out the fridge so I can do a big restock later, which is fun to me. When I get lazy, I make lots of SUPER simple meals like omelets, cheese toast, refried bean quesadillas, etc. I totally get the food apathy thing, which is so weird. I still enjoy eating…but I just don’t want to think about how to buy or make the food at times haha.

      As much as I love food sometimes it’s nice to put it on the back burner for a while (but still try to eat healthy…ish) and put more focus into other things

    Sometimes I just don’t want to cook anything fancy and will just go on a clean out the pantry/fridge thing. Those meals are sometimes the best and most nourishing for the body and mind!!!

      For some reason hot temps make me pretty lazy too. I don’t even want to touch my stove… or move for that matter 😛

    I’ve been extra lazy too with my food! My go to meals are rice with hummus + salsa + microwave steamed veggies, smoothie bowls, and toast.
    I’m totally craving your dinner now though!

    Trust me, I make scrambled eggs for dinner far too often even when I’ve had eggs for breakfast/lunch just because I really can’t be bothered, especially when it’s hot and muggy out!

    Food laziness for me = throwing a can of seafood packed in olive oil, on a bed of greens, throw in a packet of crunchamame edamame and wrap it all up in seasnax nori sheets!!

    Pretty sure I go through some sort of food laziness every other week. I have all these great plans for the first week, and then the next week I get a little lazy with planning and throw random things together. My go-to lazy dinner is typically an egg scramble, usually with feta and avocado, because I try to make sure I never run out of those 😉

      Love me a good egg scramble. Eggs are such an excellent staple to have on hand! Keeping the right ripe avocados around is a bit of a science 😉

    Yes! Speaking of… it happened to me tonight around dinner time. Usually, my go-to is eggs because I always have them and they are easy to make. And of course, the usual fridge clean out that we label the “kitchen sink” meal.

    Food laziness yes- at school usually when I’ve had long days. I often throw together plates of random things when I’m lazy or need to clean out my fridge before going food shopping. I often have eggs or random fruits & veggies. Your sweet potato looks delish tho!
