What I Ate Wednesday: Hard Work is Delicious

Hi friends! Apologies for being absent Monday. I had (another) last minute 4 day trip to NYC, but I can’t complain because I saw some of my best friends from school, most of whom I hadn’t seen in a year! Catching up with friends can be a whirlwind of emotion because you realize just how much you miss them but how happy you are to see them. It’s so funny, I was really nervous to see them even though we lived together for almost 4 years in college, but as soon as I was enveloped in hugs I realized I was just being silly. This time of year is making me especially nostalgic. *le sigh*

I’ll probably pontificate on how surreal it is being an adult plenty more in the future, but for now I’ll get straight to the food.

I was working on a bunch of recipe and photo projects for work yesterday and a couple of the left overs from the shoot might have turned into my breakfast and lunch. #notmad

Breakfast

Dragonfruit Smoothie Bowl – this recipe will be shared on Bai’s website in a couple weeks!… it was pretty fantastic

Blueberry Oatmeal Muffin – another recipe that will be on Bai’s website soon. My lovely boss lady, Rachel made this recipe and she has a ton more like it on her own blog.

Avocado Toast & Brussels Sprouts with Mustard (random but delish combo)

Whole Food’s was having a 5 for $5 avocado sale yesterday so yeah I bought a bunch, only they’re all going to be ripe in the next day or so which means AVOCADO PARTY

    That smoothie bowl is exceptionally beautiful, my friend. I’ve got to try dragonfruit! I do get nervous seeing friends after it’s been a while, but same thing, we get together and it’s like time hasn’t passed and I realize I was being silly! And yep, just chuggin’ along working year-round. #adult

      It’s funny having a sister and mom being teachers and I’m just year round grindin’ – I will admit, dragon fruit isn’t particularly flavorful but it’s so damn pretty!

    I actually just saw a friend from high school last night and I completely understand the whole nervousness feeling, but then when you are reunited, you realize just how silly it was. I guess I sometimes think we won’t have anything to talk about, but it ends up being the complete opposite since we have SO much to catch up on!

      Exactly! I’m just so bad at staying in touch in the times between so I usually feel a little guilty

    That toast…swoon! Full panic when all the avocados start to ripen at full speed…I know the feeling! Yeah to seeing old friends and having fun in NYC…The weather is beautiful right now! xoxo

      So nice! It was supposed to be rainy that weekend but it was gorgeous! I felt totally spoiled

    Feeling SO weird seeing Ithaca back in session and not being there! Are we has-beens?! Haha. So cool that you got to catch up with some friends though.. and NYC trips are never bad! =)

      I knowww oh Ithaca how I miss you. I’m thinking I might make a trip during the fall because it’s so hard not to 😀 But yeah I’ll probably stay very far from Moonies 😉

    I love the sprouts and mustard combo too! Visiting where you went to school if you’re no longer a student can definitely be strange, I just did it for the first time since graduating and it was surreal. I felt like I didn’t have a reason to be there!

    Um dragonfruit smoothie bowl? That sounds amazing. If I went a year without seeing my best college friends I would probably feel all the feels as well–TOO MUCH LOVE.

      Seriously! The thing I miss the most about college is just being in close proximity to all the people I wanted to see

    This summer in NYC I met up with a bunch of friends from elementary and middle school who I hadn’t seen in years. I was pleasantly surprised how everything felt so natural and normal and we got along like no time had passed. Those types of friends are keepers! Ah I got that 5 for $5 avocado sale too! Made my week.
