4 Creative Toasts for (Healthy) Lazy Meals

October 27, 2015 by Georgie @ The Long Run

I think there’s a bit of a misconception that healthy food bloggers eat fancy gourmet meals every day. At least that’s what I pictured a food blogger’s life was like… until I started blogging about food.

4 Creative Toasts for (Healthy) Lazy Meals

Now maybe I’m the odd one out here, but because I have a 9-5 job, a big chunk of my nights and weekends are dedicated to this blog. That also means by the time I’m done cooking, shooting, doing dishes, then more dishes then somehow even more dishes on a Sunday night I’m pretty much tapped out in the kitchen for at least the next 5 days.

Week days I’m on my tupperwear grind, eating leftovers and quick, fuss-free veggie-packed meals. While it does require some planning, a little extra prep on Sunday, I really enjoy eating this way because I don’t have to fuss and fret throughout the week.

I also rely a lot on what I call “lazy girl meals.” These are recipe-free, easy, healthy and tasty and almost always take less than 20 minutes.

A couple of my favorites include:

Big ass salads

Pack a bowl of lettuce with veggies, seeds, nuts, avocado and drizzle with olive oil or tahini, salt & pepper

Zoodles with Pesto & Eggs

Loaded Sweet Potatoes

Cook a sweet potato (4 mins in the microwave) and stuff it with veggies, tahini or if you’re craving sweet some nut butter and cinnamon

Grains n’ Veg

I’ll do some farro, quinoa or lately I’ve been loving Banza chickpea pasta and load it with equal (if not more) amounts of veggies and use pesto, tahini or red sauce

But lately I’ve been obsessed with making healthy toasts. Now I know what you’re thinking, “toast for dinner?” But hear me out.

Forget toast as a side to a scrambled egg at breakfast, and instead consider it instead an epic toppings vehicle. Once you’re in the toast mindset, you’ll start seeing creation possibilities everywhere you go.

4 of my favorite T0ast combos

Savory

Avocado & Pepita

Avocado toast might be old news to many, but it’s still so damn good. The key for me is adding a pinch of salt, trader joe’s does a great garlic salt mix, then topping with pepitas for the extra crunch.

Hummus & Hemp Seed

Aside from being a fantastic alliteration, hummus and hemp seed is a fantastic combo. If you want to get fancy, then try some jazzy hummuses like roasted red pepper or garlic.

Sweet

Chocolate Peanut Butter, Banana & Coconut

Peanut butter, chocolate and banana are probably the hottest threesome around. Ok, did that get inappropriate? #SorrynotSorry Oh and the shaved coconut? Icing on the cake…. or like coconut on the toast.

Blackberry Ricotta Honey

Ok, so this one is my personal favorite! Ricotta has recently re-entered my life and I’m left here wondering how I could have ignored it for so long. I highly recommend getting the whole milk ricotta because go whole or go home! Blackberry and honey just takes it to a whole other level.

There you have it! So simple they didn’t need a real recipe. Hopefully these toasts will inspire more creations. If you make any, post in on Insta and tag me @init4thelongrunblog – I can’t wait to see your #epictoast

Your Turn:

  • Do you have go-to meals for when you’re busy or feeling no so fancy? (love adding new ones to my routine)
  • Do you have any favorite toast combos?

All about simplicity these days, because there never seems to be enough time in the day! Quick easy throw together meals is how I roll…Sweet potatoes with scrambled eggs and all the veggies are my nightly go to lately. Easy, versatile, and can all go in one pan…LOL!

I’m on the tupperware grind during the week too! Once I cook up a new recipe, I just dig into the leftovers for the next few days which saves me energy from cooking dinner every.single.night and saves me time from cooking too!

Yes, that’s one of the nice things about doing so much work on the weekend… you get to eat it all week 😉

I am exactly like you, except my full time job is more like 9 to whenever they let us leave which can vary tremendously (life of a lawyer!) So unless I am photographing a recipe for the blog, or I meal prepped far enough ahead, my lazy girl meals are the quiches or frittatas I make on Sunday to last a week, baked potato/sweet potato with scrambled eggs, or salads. Or oatmeal cakes for dinner 🙂

Yes! Perks of being a blogger = leftovers from weekend shoots.

This post is perfection! It’s like you knew I needed easy and fast meals. Your mind reading skills are incredible ;). I’m a huge fan of breakfast for dinner. Scrambled eggs with hummus, some kind of green, and a microwaved sweet potato compose my go-to friday meal after a long school week. I am going to have to go to the grocery store tomorrow to invest in some whole milk ricotta because your pictures have me drooling all over my keyboard! Fabulous post Georgie

Wow! Great minds think alike! Of course, your definition of lazy seems a lot less…lazy (haha) and more graceful than mine. My go-to’s include eggs, nuts, and fruits. I definitely love the idea of blackberries and ricotta though!

Eggs nuts and fruits are the best! I hadn’t had ricotta in a while and omgosh is it good!

Now I’m seriously craving toast!! Oatmeal is a go-to lazy dinner for me and rice bowls.
Some of my fave toast combos are: Avocado, seedy dijon, curry powder, and lime juice. Avo and almond butter. Hummus + salsa. Nut butter, jam, caramelized banana, and coconut flakes. Tahini and basically anything.

MMm rice bowls! Love all those combos. I need to start using more curry powder. Tahini is life

Almond butter, banana, and honey with cinnamon and cayenne. It’s slightly grown-up pb&j.

I’m going to try pepitas on my avocado toast for lunch 🙂

I’m all about toasts, loving the ease of making them and the versatility. Espcially eggy-in-a-basket with mashed avocado on top. Out of curiosity, what type of bread do you tend to prefer for your toast?

Ooo I like the sounds of that avo-eggy toast
