My relationship with baking is an interesting one. I love the idea of being good at baking, but in practice I “go rouge” way too often. Which once in a blue moon pays off, but mostly my experiments with complicated creations winds up flat (or runny or burnt or funky.)

So instead, I stick to what I know: simple, easy, quick yet delightfully satisfying.

Upon quick inspection you’ll probably notice one big thing (aside from being vegetarian) about all my recipes. They’re all crazy simple. My goal with this blog is to share simple starting blocks that you can take and run with. While it’s always good to follow the recipe exactly at first, adding substitutions and additions can be so much fun once you’ve got the basics down.

While I absolutely appreciate the art and science that is fine dining and intricate recipes, this blog is really about making “playing in the kitchen” an exciting and stress free process. Oh and did I mention easy?

These cookies are a perfect example of almost too easy. As in, I made them twice within a week because they were that easy to make… and eat. You guys, I ate a lot of these cookies. They’re a variation of my Double Chocolate Chunk Cookies which have always been a fan favorite, but with a seasonal twist. GINGERBREAD. I know, I’m not over it yet.

Another thing I love about this recipe is how, the cookies taste incredible out of the oven (duh) but they’re just as good, if not better, after a day or two in the fridge! Often with a baked good I find that they really have to be eaten within a day or two, to get the full impact (or is that just the excuse I tell myself so I can eat them all within a day or two… who knows.) What I’m trying to say is, you can make a lot of these cookies without fear of them going “meh” (you know, a technical baking term) after a few days. But good luck keeping them around longer than a few days to test that out 😉

These little beauties are like biting into chocolatey gingerbread pillows. The best is when you get a mouthful rich dark-chocolate chips. They’re the perfect size for a mini-dessert after lunch or dinner. They won’t leave you stuffed or left craving more because they’re light, yet so satisfying.

Flourless Chocolate Chip Gingerbread Cookies
Recipe Type: Dessert
Cuisine: healthy

Cook time: 15 mins
Total time: 30 mins
Serves: 16
Ingredients
  • 1 Cup of Nut Butter (I used creamy almond butter)
  • 1/2 Cup of Coconut Sugar*
  • 1 Medium Egg
  • 1 Tbsp of Molasses
  • 1/2 tsp of Powdered Ginger
  • 1/2 Cup of Dark Chocolate Chips
  • *Can be substituted with
Instructions
  1. Preheat oven to 350º F
  2. In a medium sized mixing bowl beat together nut butter, coconut sugar, 1 egg, molasses and powdered ginger until a dough forms
  3. Mix in dark chocolate chips
  4. Store in the fridge for at least 30 minutes so dough firms up
  5. On a greased baking tray, roll dough into 1 1/2″ balls
  6. Bake for 10-15 minutes
  7. Cookies will be very soft out of the oven and firm as they cool
  8. Store in fridge for up to 2 weeks

    I gotta get my hands on some molasses!! I see it in so many recipes and I’m like “I totally WANT to make that I just have YET TO PURCHASE MOLASSES”. Going to add to the grocery list this week, and try not to forget my list when I go to the store. It’s usually the list or my reusable bags – never can seem to remember both!

    AH, these look Deevine. As I am sure you’re well aware, I LOOVVEEE experimenting with baking. Although when you get super confident about a recipe and then it fails, it is kind of saddening too. I try to stay positive though!
