Chocolate Chip Cookie Cake (Vegan)

Who needs a cake when you can have a giant cookie!? I seriously cannot think of a better way to celebrate an occasion than to make this crispy on the outside, gooey on the inside, moist, and most importantly, chock-with-chocolate cookie cake.

What am I celebrating you ask? Well, this Thursday (February 11th) marks one of my absolute favorite human being’s 26th year of life. That’s right, my partner-in-Morley, the Morley OG, the smelly Nellie with a belly full of jelly, my sister Nellie is having a birthday.

Growing up two and half years apart, we’ve always been really close. As in, when we had to share a hotel bed as kids, I’d invade all of her personal space and get waaaay too close (being the dutiful annoying little sister I was.) But really, I couldn’t imagine who I would be without her.

Not everyone is blessed with such a fun, kind, compassionate, caring, creative, patient sister, but I try never to take it for granted. She’s that one person I can be 110% myself around. Despite my tendency for extreme stubbornness and my inability to ask for help, she’s the one person I do let my guard down around. No judgement, no competition, just our goofy goober selves, laughing till we cry and crying till we laugh.

This cookie cake is perfect for my cookie dough-loving sister because the dough is just as delicious (and edible) as the finished product. No raw eggs to worry about. So if you have a spoonful (or two) before this bad boy goes in the oven, you’re all good.

One of the factors making the final product so irresistibly soft on the inside and crisp on the outside, is the creamy-dreamy Barney Butter Vanilla Espresso Almond Butter. By now you guys know I’m obsessed with this stuff (aka they made it on the coveted list of favorite almond butters EVER, hello, major).

Their flavors on on point, but what always gets me is how perfectly creamy it is. Whether I’m eating it in the form of these Almond Butter Blondies, Protein Bars, Pecan Pie Balls, on a smoothie bowl or just straight out of the jar, this stuff does not last long around these parts. You can find it at most grocery stores as well as TJ Maxx, Home Good’s and Marshall’s.

Chocolate Chip Cookie Cake (Vegan)

I seriously cannot think of a better way to celebrate an occasion than to make this crispy on the outside, gooey on the inside, moist, and most importantly, chock-with-chocolate cookie cake.
Ingredients
  • 1 Flax Egg (1 tbsp of flax seed + 3 tbsp of warm water)
  • 1 Cup of Almond Butter (room temperature) (I use Barney Butter Vanilla Espresso)
  • 3/4 Cup Coconut Sugar
  • 1/4 Cup of Almond Milk
  • 1 Cup of Whole Wheat Flour
  • 1/2 teaspoon of baking powder
  • 1/4 Teaspoon of Salt
  • 3/4 Cups of Vegan Chocolate Chips (I used Enjoy Life Brand)
Instructions
  1. Preheat oven to 350ºF
  2. In a small bowl whisk together the flax egg, almond butter, coconut sugar and almond milk
  3. In a separate bowl combine flour, baking powder and salt
  4. Slowly incorporate the dry and wet mixtures until a dough is formed then fold in the chocolate chips.
  5. Grease a 8″ circular pyrex cake pan and press cookie dough into pan until it evenly fills the pan
  6. Bake in the oven at 350º for 25 minutes or until cooked all the way through
  7. Allow cookie cake to cool before slicing into 8 pieces

    Look at that throwback picture…loving the outfits ladies! Happy birthday Nellie!! My brother and I are 5 years apart but we’ve always been super close too, it’s so refreshing. 🙂 I love cookie cakes too, but chocolate cake is my one true love. <3 I'm totally making this for the weekend though!

    Happy birthday to your sister! I can relate to everything you said about her with my older sister, Melissa! We are only 18 months apart and we grew up attached at the hip… I may or may not currently live with her and her husband so tell yours to count her blessings 🙂 I’m big on cupcakes, but wouldn’t turn down a cookie cake any day of the week especially if it’s healthy like this one!

    I’ve never attempted vegan baking but I am a little intimidated and also nervous about the results! This cookie cake though doesn’t even look vegan at all!! Looks so yummy! And also yay for sister love!
