This Southwestern Black Bean Burger Salad will satisfy all your burrito cravings, without having to pay extra for guac. This weeknight meal is ready in less than 30 minutes with the help of Gardein’s Chipotle Black Bean Burger.
I wish I could tell you that cooking an exciting new dish was the first thing I wanted to do after coming home from a long day of work, but that would be 0% true. While I love playing in the kitchen, it’s not something I can do when I’m tired or hungry. My patience threshold is ruuul low after 7pm. When it comes to cooking elaborate weeknight meals my thoughts are: “Ain’t nobody got time fo that.”
In fact, most days when I get home I have to grab a snack ASAP before I proceed to devour the entire fridge. Hungry Georgie is not a pretty sight at all.
So when it comes to dinner I’m a simple gal. But simple doesn’t have to be boring or unhealthy. There are so many creative, satisfying meals you can make with a handful of fresh ingredients and less than 30 minutes. Which happens to be the threshold on the amount of time and effort I’ve got.
One of my favorite brands when it come to veggie proteins is Gardein. If you’ve been following the blog for a while you’ve probably seen me talk about Gardein before. Like when I made zoodles and meatless-balls, or these chicken-less pesto dippers, or the meatless thanksgiving meal. In fact, I usually have the Gardein chicken-less strips at least once a week over a salad bowl.
Today I’m sharing a way to use Gardein’s Black Bean Burger outside the bun. I’m a huge fan of veggie burgers. I love ‘em homemade but I’m real picky when it comes to the ones I buy. There’s probably only 2 or 3 brands I really love and Gardein is one of them. Right now Gardein is offering a rad coupon for $1 off any of their products (wut wut)

My favorites are the meatless meatballs, the chick’n strips, these veggie burgers and the chick’n crispy tenders.
While I love the classic veggie burger on a toasted oatmeal bun (from Something Natural yaaas) I thought it would be fun to shake things up a little and use these bad boys in a spicy salad. This bad boy has all the southwest flavors you crave from a good burrito bowl plus a healthy boost of vitamins from the kale and vegetarian protein from the veggie burger. All together this dinner takes about 20 minutes to put together so no fear, by the time the the frantic hunger rage settles in you’ll already be chowing down on this epic southwestern style feast.

My productivity threshold after 7pm is also very little. I love a good quick meal like this and looks super satisfying too! Mexican flavors all day. Even though I eat meat a little bit, I would actually probably prefer a hearty veggie burger! If I am at a restaurant, the toppings totally sway my decision though 😉 (hello avo)
Haha I totally agree – burger toppings are a game changer for sure
Yum! This couldn’t sound easier! Your photos are gorg!
Thanks Rachel!
This sounds fantastic, Georgie! I’m always looking for super quick recipes for weeknight meals, and these sound just perfect for Mark & me!
Thanks Alexa! Quick and easy is the way to go during the week fo sho
I’ve been wondering how that brand is! I love my black bean burgers, so simple and easy to make on a lazy day. But I saw their “chicken” and was intrigued! Anywho, this looks YUM.
xo,
Sarah Grace
Yeah – I like the strips a lot!
I’ve tried the beefless grounds before from Gardein and I was a fan, I’ll have to pick the burgers up next time!
Those are so great and easy to sub where there’s normally meat
30 minutes is pushing it for me 😉 At agreed about grabbing a snack when I walk in the door – otherwise, I’m just nibbling at the ingredients the whole time I’m cooking!
Saaaaame!
I LOVE Gardein products! I’ve never tried these chipotle black bean burgers- going on the menu for a SUPER EASY dinner next week.
You’re gonna love – so crazy easy but still delish
I’m all about the easy and quick dinners too these days, I’ve used the Gardein gluten free crumbles but never tried the burgers because I’m always trepidatious about packaged burgers. Glad to see you like them!
They have a ton of flavor and I really like the texture of all of the gardein products
These look great! If they don’t have soy in them, I would definitely keep these on hand. Thanks for sharing!
I’d have to check on the soy but I’m a big fan of their products
Gardein has some of the best products ever! I love their mock meats 🙂 I can imagine how delicious their veggie burgers are! This salad looks so beautiful and colorful! i love the black bean flavors and the Mexican fusion!
Thank you so much Cassie! So glad you love veggie meat too <3 xo
Ooh, I’ve never tried a black bean burger before… Is it easy on the digestion? I love Southwestern, but it doesn’t always love me. I’ve never tried any Gardein products. Where do they sell them?
I’ve found mine at either whole foods or stop in shop – I believe they have a store locator on their site – it’s usually in the frozen section with other veggie burgers or the natural frozen section. The burgers themselves aren’t too spicy
Oh this looks so good! Love black bean burgers and the southwestern black bean combo is a classic! Good to know that Gardein makes some great veggie burgers!
Thanks Liv – nothing beats a ‘lil Mexican inspired meal
