Happy Tuesday you lovely humans! I’m comin’ atcha with a new recipe that I think you’ll seriously love. Spoiler alert it has almond butter in it, but this time we’re getting a little spicy and a lotta savory.

As a self proclaimed stubborn know-it-all (we’re kind of the worst, trust me) I either embrace a trend whole heartedly or I’ll scoff at it until it goes away. The whole vampire thing a couple years ago? My eyes were rolling so hard I thought they’d get stuck in the back of my head.

However, one area where I’m a little more excited about trends is in the healthy food industry. I know, I know, I’m one of those people. For a while I tried to be “too cool” about the whole thing. Quinoa? Chia? Kombucha? Avocado toast? Green smoothies? Matcha? But let’s be real I freaking love all of those things. I might as well build my own damn bandwagon (or just live inside a whole foods).

With health food I still think it’s important to bring a healthy dose of skepticism to the table (never a tough job for me) because there is a great deal of jazzy marketing involved to make these products pop. But when it comes to simple, whole food products like nut butters and this whole make every vegetable a noodle thing, I think it’s pretty safe to say these are awesome trends that hopefully won’t be going away any time soon.

Did you guys know that May is Allergy Awareness Month? While I personally don’t suffer from any major allergies I have so much empathy for those who do. I actually dated a guy for a while with a severe nut allergy (obviously it wouldn’t have lasted very long these days, but I was younger and less nut butter obsessed back then), the point to telling you that was I saw how hard it was to find allergy friendly products only a couple years ago. The fact that there’s so many more allergy friendly products available (that actually taste good) is amazing. It’s another reason I love Barney Butter, because they make their products in a peanut free facility. That means, if you’re allergic to peanuts (but not tree nuts) Barney Butter is a great almond butter option for you.

You can find Barney Butter at most grocery stores in the natural aisles, I’ve also seen it a ton in Home Goods and TJ Maxx.

Zoodles with Spicy Sesame Almond Butter Sauce

Zoodles with Spicy Sesame Almond Butter Sauce
Recipe Type: Dinner

Ingredients
  • 2 zucchinis, spiralized
  • 1 tsp of olive oil
  • 1/2 cup of creamy almond butter (I use barney butter bare)
  • 1/2 tbsp of soy sauce
  • 1 tsp of sesame oil
  • 1 tablespoon of tahini
  • 1 tsp of lemon juice
  • 1 tsp of maple syrup
  • 1/2 – 1 tablespoon of srircha (depending on spice preference)
  • 1/4 cup of warm water
  • 1/4 cup of sprouts
  • 1/4 of crushed slivered almonds *for garnish
Instructions
  1. Using a spiralizer, spiralize 2 medium zucchinis, put aside
  2. Measure out almond butter and heat in the microwave for 30 seconds to soften
  3. In a medium sized bowl mix together almond butter, soy sauce, sesame oil, tahini, lemon juice, maple syrup, srircha and water. Whisk until creamy consistency
  4. In a large sauté pan sauté zucchini with olive oil for 8 minutes, add 3/4 cup of dressing and sauté for 4 more minutes
  5. Divide onto 2 plates and garnish with sprouts and crushed almonds

    I use zoodles for spaghetti, and I’ve done a chow mein recipe with them. This recipe here takes zoodles to a whole other level! Saving this to try!

    I can be a little stubborn when it comes to trends, thinking that I am “above” certain things (I feel you on the whole vampire thing), but sometimes I go all-in (no-bake energy bites.) I haven’t caved and bought a spiralizer, but this recipe tempts me…

    I make noodles at least 3x per week so I’m pretty obsessed. I usually just put pasta sauce on them but this nut butter sauce looks bomb!

    Yum!! I am so in love with zoodles..one of my go-to dishes during the Whole30. I’ve never tried it with a sauce though so I’ll definitely be giving this a go 🙂

    I LOVE making sauces out of nut butter! And pairing it with zoodles – yum! I’ve actually never tried Barney Butter before, but I’ve heard so many good things about it!

    I’m always skeptical about new “super foods” and “trends” that seem to be discovered ever day. The main reason I got my degree in nutrition was because I was just so fascinated with it all. Now about these zoodles….can’t wait to make that sauce mmmm!

    This dish sounds almost too good to be true…
    As far as trends go, I hate following with them at first. Like I refused to use ## for the longest time, and now look at me, HA. Okay, kind of necessary though… But all in all, I have to make up my own (stubborn) mind first before I get on the bandwagon.

    Barney Butter is my jam! I’m allergic to all nuts so it’s like the only almond butter I can have. I literally get cases of it shipped to my house every couple months lol. Definitely going to have to try it in this recipe – time to dust off the old spiralizer!

    I made this today and threw in some matchstick-cut bell peppers and then some green onions for garnish. So scrumptious that I’m already dreaming about eating the leftovers for lunch tomorrow.
