This pesto and ricotta naan pizza is a total mouthful to say and a delicious mouthful to bite into, but it’s super simple to throw together.

Simple meals, like this one, have been a total life saver lately. Even in my busiest times, I still crave healthy, home cooked food, which means I’ve learned to make stupid simple recipes that still satisfy those cravings. In fact, I even shared my 4 biggest tips for taking the stress out of cooking healthy this week.

I’ve found that when I cut corners with food, it leaves me dragging. When you’re in a busy season of life, dragging is the last thing you want to feel. Not to mention, constantly relying on eating out or ordering in, can drag down your finances which can be a total bummer.

All this to say, even when the going gets tough, I’m a firm believer in still carving out time to make easy, healthy meals at home as much as possible. This naan pizza will take you less than 25 minutes all said and done.

A couple weeks ago, I shared a more personal post about where life is at right now. A quick summary, if you don’t want to read the whole post:

It wasn’t until recently that I realized something big had been missing from my life. That thing was a social life and more close personal relationships. As a result, the last several months have been filled with a lot more wonderful people, and new experiences, but it’s thrown my normal routines a little out the window.

It was cathartic to write but I was naively hoping that once it was written, the magic solution where I’d be able to “do it all” (and do it all really well) would appear and life would be easy hence forth. Ok so I didn’t really believe that would happen, but it would have been really nice if it did.

However, since getting real with myself, I’ve had some really great conversations around priorities. It’s allowed me to talk with the people I depend on and who depend on me. Despite my stubborn streak, I’m learning it’s ok to let people know when you need their help *gasp.* Not only that, but it’s important to let the people you care about know where you’re at, the same way you’d want them to share that information with you.

As the summer seasons heats up and my life continues to unfold here, I’m still trying to figure out what my priorities really are. I’m definitely a “I want to do it all, all the time, forever, with zero consequences” kinda gal, but I also know that that’s literally impossible. I’m also learning to be ok with not always knowing exactly what I want every second. Not always knowing what the next step is. Accepting that things might change in ways you’d never expect, and maybe it’ll be ok, even if it’s different.

But at the end of the day, pizza should always be a priority.

Pesto and Ricotta Naan Pizza

Pesto and Ricotta Naan Pizza
Recipe Type: Dinner
Cuisine: American

Cook time: 20 mins
Total time: 30 mins
Serves: 2
Ingredients
  • For the Pesto
  • 1/2 tsp of Salt
  • 1 cup of Basil
  • 1/4 cup of Walnuts
  • 1/3 cup of Olive Oil
  • For the pizza
  • 2 pieces of Naan
  • 1 1/2 cups of Cherry Tomatoes
  • 1/2 cup of Ricotta
  • 1/3 cup of Pesto
Instructions
  1. To make pesto: Place all ingredients for pesto (basil, walnuts, oil and salt) in a food processor or magic bullet and blend until smooth, stopping to scrape down the sides
  2. For Pizza: preheat oven to 400º F
  3. Spread pesto on the slices of naan bread
  4. Halve the cherry tomatoes and place them on naans
  5. Measure out ricotta and dollop on both slices of naan
  6. Bake for 15-20 minutes or until naan is crispy, but not burnt

    Oh man, pizza is definitely a top priority for me! 😉 I consider it a food group. I absolutely LOVE Naan pizza, and anything with pesto and ricotta is literally pure happiness for me. Making this for sure! When I’m really busy, I love making big dinner salads with ALL the topping, eggs with toast and avocado, or a simple chicken/shrimp stir fry. You know this already, but I’m gonna be on Boston for 3 weeks starting July 25th, CAN WE MEET UP?! <3

    My go-to easy dinner this summer has been quinoa with parsley and hemp seeds. It comes together quickly and has plenty of protein and fiber for staying power!

    Uhhh sign me UP! Naan pizza is one of my favorites, especially with ricotta. Why have I note tried it with pesto?! I’m putting my homemade basil to use!

    I’m in the camp of “make eating good food a priority,” because I feel better and a little more balanced, even when external things are out of my control. My go-to dinner is chicken and zoodles! Gorgeous photos, as always 🙂

    I haven’t had really good naan in a long time. When I’m in a pinch, I like to make flatbread pizza with flour tortillas. They only take 10 minutes to make and are super delicious!! 🙂 But if I could just find some naan….

    This looks great! Love the combo! I just got a job working as a barista! I’ve forgotten how it is to wake up at sunrise to go to work! And lack of time spent to eat the food!!!!!

    You’re my favourite <3 <3 love this post and this beautiful pizza. When things are busy I always make sure to have lots of rice cooked and in the fridge because rice bowls are so easy to whip up and they're hearty! Sometimes my go to busy meal ends up being cereal, no shame.

    This looks incredibly delicious but different! I’ve never been a fan of “normal” pizza and would immediately go for something like this over regular pizza any day! Thank you for the recipe!

    Yummm. I love pesto pizza and this one looks so light and summery! 🙂 My go-to meal when I’m busy is a veggie omelet and with fresh fruit–or (dare I admit it) pancakes. Sometimes breakfast for dinner is just what you need!
