Take your summer time s’more game to a whole new delicious level with these Almond Butter Banana S’mores.
As of last Monday, summer is officially here. Boo to the Yah. Heck to the Yes. Out here on Nantucket it’s definitely starting to feel like summer. The beach days are a plenty and so is the insane traffic. This gal’s whip is pretty much a bike from now until September because my patience for summer drivers on island is non existent. Almost as nonexistent as the parking spaces in town.
Ok, I’ll stop complaining because really I’m so excited that summer is here. But really, every salty year-rounder has to have their 2 seconds to whine about traffic and parking before they can move on with their day/summer and it looks like I just had mine.
Instead of focusing on the craziness that ensues over the next two months, I’d rather focus on the number of s’mores I’m about to demolish during summer 2k16.
I’m actually shocked I’ve never shared a s’mores related recipe till now because they’ve got to be one of my favorite combos of all time. Crunchy graham crackers, gooey chocolate and crisps, fluffy marshmallows. Get at me. Plus, what’s even better than the delicious tastes and textures is the process of making a s’more.
I love that you have to patiently roast your mallow in anticipation for the graham sandwich you’re about to craft. Plus, s’mores are a social dessert. It’s a rare person who just whips up a solo campfire and makes themselves a late night solo s’more. I mean, if that person exists props to them because they’re a boss, but for the rest of us s’mores are often accompanied by great people.
For today’s s’moiree (a combination of s’mores and soiree) I wanted to help take your s’mores game to the next level. Yup. S’mores just got even better (if that’s possible).
In addition to the classic Graham + Chocolate + Marshmallow-y goodness, we’re adding bananas and almond butter. I know, I know. It’s almost too good. But you’re worth it girlfrand. Banana, almond butter and chocolate are some of those special ingredients that are just crazy versatile. They go well with so many different things, but they really taste delicious together. The texture of these s’mores is seriously unstoppable. I was worried that the OG s’more couldn’t get better, but oh was I wrong.
Today we’re using Barney Butter’s original creamy almond butter. If you’ve been reading the blog for a while, you know that I have a thing not only for almond butter but Barney Butter specifically. The creamy texture is seriously like no other brand out there. If you’re on the fence between PB and AB this is the perfect nut butter for you. It reminds me a lot of peanut butter because of the creamy texture, but it has the subtle sweet flavors of almond butter. It’s great in cooking and recipes because it’s spoonable and spreadable. It’s also great for anyone with peanut allergies because it’s made in a peanut free facility. I get mine either at Whole Foods or TJ Maxx/Marshals/Home Goods, but it’s available in many grocery stores in the natural foods section.
If that’s not enough I’ve also thrown together 5 more creative s’more combos for those nights when you wanna get crazy or show off or both.
5 More Creative S’mores Creations
- Coconut Flakes + Almond Butter + Chocolate + Marshmallow
- Raspberry + Chocolate + Marshmallow
- Strawberry + Coconut + Chocolate + Marshmallow
- Peanut Butter Cup + Marshmallow
Almond Butter Banana S’mores
- 1 Banana, sliced
- 1 Bar of Chocolate
- 8 Marshmallows
- 4 Sheets of Graham Crackers
- 4 Tablespoons of Barney Butter Almond Butter
- Cut the banana into small circular slices, place in a bowl
- Divide up the 4 sheets of graham crackers so there are 8 total pieces (2 per s’more)
- Break up the chocolate so there are 4 squares and place aside with bananas and graham crackers
- Toast (8) marshmallows slowly over an open fire, rotating so each side is lightly golden brown
- Spread almond butter on one side of 4 crackers
- Assemble the s’mores by placing the slices of banana on the almond butter spread cracker, then layering on the square of chocolate, adding 2 roasted marshmallows and finally, adding the top graham cracker

This is so perfect and perfectly timed. I was just thinking over the weekend that I have yet to have had a s’more yet this summer, which is so weird for me. I have usually had a bunch at this point, but I guess that means I will have to make up for it for the rest of this summer. I love roasting my marshmallows to golden, definitely not burnt for me.

1. I’m totally that person who does the midnight s’more thing. Except no campfire. We have a gas stove so I just do it right there in the kitchen lol

Oh I love to get them nice and burnt and crispy! They are so much better that way…Oh the traffic…I feel like it was overnight and it just got horrible. It is here and so are all the bad drivers, cyclists, mopeds, and even walkers. LOL
This is just downright magical.
I basically grew up on S’mores. Any time my family threw a party, a bonfire was always involved. We used to put peanut butter cups on them if we were feeling fancy, so I’m definitely all about the addition of banana and almond butter! I can’t believe you managed to make this classic even more dreamy.

I’m impatient when it comes to cooking marshmallows–I always light mine on fire and then blow it out, haha. I know char is supposedly bad for you, but hey. I like to live a little. 😛
OMG!! These look amazing! I’ve never tried making a s’mores’ before but it’s on my Summer to do list! Australians don’t really do s’mores, our tradition is to use a stick and roast marshmellows over a fire until they are on fire/burnt on the outside and gooey on the insde. You know you’ve nailed it when you burn your tongue! Thanks for the inspo to get my s’mores game on!
S’mores seems to be the theme right now, and I LOVE THAT. 🙂 What a great idea to not obsess over the craziness and eat s’mores instead. I love burnt on the edges marshmallows, because they spread so nicely, and you fit all those ingredients really nicely into one s’more. Is Alter Eco your favorite chocolate? And I TOTALLY agree that Barney Butter is the BEST almond butter evah!
