Hey guys, I think I’m going to create a new diet program called the breakfast sandwich diet. It’s pretty simple really, you just have to eat breakfast sandwiches for all 3 meals. Anyone want in? You’re right, that’s a silly question, of course you do!
Ok, jokes aside there really was a three day period this summer where I think I had at least five (maybe six) breakfast sandwiches in that time frame. So needless to say I’d rock the BSamDiet.
I realized today, that this is the first recipe I’m sharing since I relaunched the blog two weeks ago. As you may have noticed there’s a shift away from mostly recipes, to a variety of different health related content. However, I still do love sharing simple, healthy vegetarian eats. What I love the most about this recipe is that it’s one I make all the time. It’s crazy simple to make and always hits the spot.
So obviously I was kidding about the breakfast sandwich diet, but it got me thinking about all the millions of ever changing diet labels we’re pressured into wearing. Gluten-free, vegan, no sugar, paleo, grain-free, dairy-free etc., etc., yada, yada, and so on. I know throughout the past several years I’ve let a mix of fear and anxiety push me into trying to eat a certain way. Whether it’s been vegan or whole30 or dairy free or grain free, at the end of the day the biggest thing that changes is how anxious I am around food. Rather that think “hmm what do I want to eat” I think “Is this good enough? am I getting every single nutrient I need? Does this fit the rules? Wait, what are the rules again?”
Often I found myself trying to fix problems in my life through food. Hoping that if I just stopped eating dairy maybe I would be able to XY and Z. Now this wasn’t always a conscious connection. I usually didn’t realize that healing my unhappiness elsewhere was channeled into trying to eat perfectly.
Not entirely on purpose, but over the past four months I’ve put less and less worry and effort into every bite that goes into my mouth. I touched on this a little in my post about exercise (LINK), but the less I’ve tried to control everything, the more natural eating feels.
I’ve had less cravings, I don’t snack late night like I used to, I’m satisfied after a meal without needing something sweet. I haven’t cut out sugar, or dairy, or gluten or anything.
The biggest shift for me has been where food plays a role in my overall health. I’ve focused more on my mental health, strengthening relationships and more personal development. So rather than being front and center every single day, food is now something I look forward to when I’m hungry and pretty much forget about until I’m hungry again.
Of course, there are still days when I snack a little more than I would like to, or I could have eaten some more veggies, but on the whole food is just food. Delicious, necessary, fun but it’s not this stressful all or nothing affair.
With that said, this breakfast sandwich is not gluten-free, it’s not vegan and it’s not dairy-free. However, it is totally delicious, it does has protein, it will keep you satisfied until your next meal and there’s some green action going on.

- 1 Egg
- 1 1/2 Tablespoons of grated cheddar cheese
- 1 Portuguese roll (you can sub with a ciabatta roll)
- 1/3 of an avocado
- Small handful of arugula
- Salt and pepper to taste
- Grate cheddar cheese
- Toast roll, cut in half, in toaster or toaster oven
- While the roll is toasting, cook egg sunny side up in a small non-stick frying pan on low heat, until egg whites turn opaque *aprox five minutes*
- Turn off heat and sprinkle cheddar over eggs, cover with a frying pan lid
- When the rolls are done toasting, mash 1/3 of an avocado using a fork onto the bottom half of the roll- add salt to taste
- Add small handful of arugula to the bottom bun
- Place the cooked egg with melted cheese onto the bottom bun
- Place the top half of the bun onto the breakfast sandwich and enjoy

And I couldn’t agree with you more. Dietary labels are so exhausting – and cause many of us to stress over food which isn’t necessary. I’m all about listening to what my bod is feeling, and still trying to have as many green things as possible.

Breakfast sandwiches have ALWAYS been on my top list of favorite foods (along with nachos and dimsum… it’s a healthy life) and this sandwich would be an amazing addition! i love how you used a Portuguese bun as well! I feel like i could fall asleep in that bun

My perfect breakfast sandwich would have: crispy bacon, tomato, red onion, arugula, and a spicy chipotle sauce on a everything NYC bagel! BAM! Why have we still not had a breakfast sandwich together? XOXO
Yum! I used to not be big on breakfast foods aside from cereal and toast but lately I am all about the eggs, egg burritos, and now egg sandwiches! Yum!
***drool**** this looks amazing! This would probably have to ben my favourite breakfast sandwich combo actually! Although maybe some bacon… althought that won’t work now because we are trying a vegetarian/pescetarian lifestyle for a while… and I think a touch of chilli sauce or homemade relish would be perfect!

This looks SO good! I love breakfast sandwiches. One of my favorite restaurants makes one with arugula, a fried egg, and bacon on sourdough, which is probably my favorite to date. 🙂
