Be honest with me… has this ever happened to you: Get home from work around 6:30/7 already hangry. You don’t know what you want for dinner, nor does anyone else. You rummage through the fridge for a suitable snack, end up eating more than you wanted. Now you’re still kind of hungry, definitely still grumpy and less certain than ever about what to cook because you never have any (of the right) food in the house. Cue delivery or scrambled eggs.
Girl, if you’ve ever been in this boat… I feel you.
When I think of an ideal weeknight dinner, a couple words come to mind immediately. Easy, healthy, fuss free, satisfying, flavorful, not a lot of dishes. Ok, so the last one was technically 5 words, but you get it.
Let’s be real. I want the best of both worlds. Something healthy, flavorful and satisfying without it taking 3 hours, 10,000 pots and pans and an additional hour of dishes. Usually by the time I start thinking about dinner, I’m already hungry, which means a long torturous meal prep just ain’t gonna cut it.
When Taylor Farms approached me about making a fun recipe with their stir fry kits I was pretty damn excited. Loads of fresh (pre cut) veggies and minimal fuss? Yeah it’s like they could read my hangry mind.
There are so many fun ways you can use these stir fry kits. With noodles, rice, shrimp, tofu, eggs… you name it! However, I immediately thought about one of my favorite fall meals, and the two most viral recipes on the blog: buddha bowls.
Buddha bowls are a hearty warm veggie salad bowl that has some kind of grain, typically rice or quinoa, raw and cooked veggies as well as a sauce.
These stir fry kits are absolutely perfect to make buddha bowls with and help cut down on the veggie prep, big time. Plus, you can make enough to have leftovers for lunch. Can I get a boo yaa (booya!).

Each stir fry kit:
- Contains fresh chopped veggies
- Packet of Sauce
The Sesame Chili Kit Contains:
- Broccoli
- Bok Choy
- Cabbage
- Peas
- Spicy Sriracha Sesame Ginger Sauce

Make it meal prep friendly:
- On Sunday (or whenever you prep)
- Cook the quinoa and store in a container in the fridge
- Chop brussels sprouts & sweet potatoes, store in the fridge
- Now all you have to do is roast veggies and cook the stir fry
- 1 bag of Taylor Farms stir fry Sesame Chili
- 1 medium sweet potato, sliced in 1/2” rounds
- 2 cups of brussels sprouts, halved
- 1 small bunch of asparagus
- 1 tablespoons of olive oil
- 1 cup of cooked quinoa
- 2 tablespoons of pepitas (shelled pumpkin seeds)
- Preheat oven to 450ºF
- Slice sweet potato into 1/2” rounds, cut the ends of the bunch of asparagus & chop brussels sprouts in half
- Toss in olive oil and season lightly with salt and pepper
- Roast for 30 minutes or until desired level of crispy
- Heat cooked quinoa and portion into 4 bowls
- In a wok or large sauce pan cook stir fry kit using 1/2 the packet of sauce, stirring occasionally
- Cook stir fry kit for 4-6 minutes or until vegetables are tender
- When all veggies are cooked and finished roasting, portion out into the four bowls
- Sprinkle with pepitas

Oh my gosh I have been in that Im-really-hungry-but-i-didn’t-prep-ahead-any-meals boat so many times because I don’t think ahead most of the time lol. Ah yesss even now that I work at home I still get like that when dinner rolls around, lol (pathetic). But these stir fry kits sound like my kind of easy meal. I need to get back into meal prep.
I think every meal for the entire fall season will consist of quinoa, greens and roasted veggies drizzled with some sort of sauce. Pesto, tahini, balsamic glaze. This looks like a delightful combo!
I live off Taylor Farms salad packs and just throw an egg or leftover chicken or something on them for dinner 2-3 nights a week. I can’t wait to try their Stir Fry and change up my easy dinner routine a bit!
